CREAMY DAIRY FREE RICE PUDDING | GLUTEN FREE

How to make easy, dairy free rice pudding!
What you'll need:
Large sauce pan with lid
Full fat coconut milk (2 cans, plus enough water to equal 4 1/2 cups total)
Rice (1 cup white medium grain, rinsed and uncooked)
Sugar (1/2 cup)
Eggs (3 room temp. egg yolks)
Raisins (1/2 cup, optional)
Salt (1/4 tsp)
Cinnamon (1/2 tsp)
Vanilla (1 1/2)
Instructions:
*If using raisins, add them to a 1/2 cup of warm water and allow to soften while preparing your rice mixture.
Pour 4 cups coconut milk in large sauce pan (save the 1/2 cup for egg mixture). Heat until you see steam. Add rice and sugar, stir until sugar dissolves. Add lid, simmer on low and stir every 5 minutes, returning the lid each time. When the rice is tender, (15-20 minutes) prepare your 'tempered' egg mixture.
*Tempering (or warming your eggs) will prevent them from being cooked when you add them to your hot rice mixture.
Egg mixture: Heat 1/2 cup coconut milk in microwave until 'just warm'. Add beaten egg yolks to milk and stir until completely blended. Add salt, cinnamon and vanilla.
Turn rice mixture off. Slowly pour in egg mixture, stir to combine. Add drained raisins.
Spoon mixture into serving dishes. Dust with cinnamon.
Refrigerate or serve warm.

    Hey guys! Creamy dairy free rice pudding coming at ya! If you love rice pudding, you will really love this recipe made with coconut milk. I always use coconut milk in this recipe...it makes the most delicious and creamy rice pudding ever! Give it a try. I would love to hear from you.

    You reminded me of something: My mom always put her rice pudding in the same glass cups you used here! Thanks for that recollection -- they also help to cut down portion size! Off to the Thrift stores!

    @tkarlmann, thank you for your comment! It's funny you mentioned the dishes. My mother-in-law gave these to me (she passed in 2020 at the age of 103!). I'm sure she picked them up from a thrift store or antique shop. She loved vintage dish ware! And the portion size is perfect.... for me anyway! =)

    Thank you so much for the recipe. I haven’t tested it yet, but i bet its gonna be really good. Even though i did Tweaked it a bit. Also i put watermelon in it for the fruit

    This is a great recipe! I especially like that it is dairy free. I cook all dairy free so I’m always looking for more ways to eat dairy free. I make cooking videos too. I’d love to learn more from each other!! Never stop learning and growing!

    Hi, there is 1/2 cup of sugar in the entire recipe, so I would say it is not 'high' sugar. Hope that helps.
