12:30 This is the correct way of cutting pineapples. In the West, they just cut off the whole outer layer of the pineapple, until all the "eyes" are gone. By doing that, they lose a lot of the best part of the pineapple (the outer layer). This guy shows how to cut out the "eyes" the correct way.

You could also have a juicer on the side. As a quick healthy drink option and putting some sort of palm tree display over the cart would make it more inviting. Bring more business. And great skills. I was worried for your thumbs.
