I am a Nepali and I really appreciate your choice of food according to the place. The best way for touring and exploring in Nepal would be visiting locals and living the way of locals. I hope you continue exploring local dal bhat power however, anything outside local influence is 50/50 with the experience. It could be better than original idea, or worse than even simple dish you could make. Happy travel : )

Here, it's wise to spend money on food on local market than the Hi-Fi places where you pay half or more for the place itself than the food.
