I worked at CFA for 3 years. At no step of the way does chick fil a brine any of their chicken in pickle juice. This is common myth I see everywhere. It come straight from the chicken plant frozen, no brining or seasoning. It's slowly thawed in a chiller, then we soak the chicken in a milk wash that is prepared the night before. It's then hand breaded and fried in a large commercial pressure cooker. I think the pickle myth comes from the fact that the sandwichs come with pickles and the juice makes the sandwich taste like pickles from sitting in the foil bag.

Made this without milk powder and baking soda. Don’t think my grocery store has milk powder (isn’t that a thing?) and didn’t understand what baking soda would be doing here. Still great.

I found the firm texture unlike any other chicken meat I've ever eaten. It reminded me of Jack Link's Jerky Nuggets but it was still juicy and it has gristle. The nuggets appear to be made from 2 different cuts with the larger half cut against the grain. So while the chicken nuggets were like something from outer space, the chicken sandwich was more traditional. The bun wasn't much to look at but it had a sweet flavor like a Hawaiian roll. Aside from the signature seasoning, I was pleasantly surprised by a most unique pickle that tasted like fresh dill without being too salty. Most people forget that pickles have their own combination of salt and spices. If you've ever had ceviche (fish cooked with lemon juice), you notice how firm the meat becomes
