Hi friend, I’m one of your newest biggest fans.🎉🎉 I have been binge watching, and I’ve watched your latest video all the way to this one. You’re cracker corn. And I also wanted to share with you that you made me cry…😮 Just because that’s how my grandmother put it together and was never able to get the recipe for it because I couldn’t remember sure what it was called. But I had quite a few flashback moments watching you put it together. I was probably eight or nine, so it was my job to squish the saltines.😊😊 I don’t typically make comments, because I don’t have the greatest eyesight. But I just had to let you know how much I enjoy watching your program, and think you’re doing a fine job.🎉🎉🎉

I'm almost seventy-one years old & remember how my family version (so very similar to yours) was always on our Thanksgiving table...It was a family favorite, & years ago I had one of those "a h a" moments when I thought why on earth don't I start making this simple & delicious dish as part of our regular family meals for my son & myself...BTW Talli, you're such a gem, & as another commenter mentioned, I also wish we were neighbors & friends❣I *LOVE* your adorable little dog...I just wanted to hold & love on her when she becme so frightened from the storm😊!

Oh, I do love good old fashioned scalloped corn. I have been known to throw in a can of green chiles sometimes, because we love the flavor combination of corn and New Mexico green chiles. We love it that way with a slow cooked pork loin roast; those flavors just all seem to go together so perfectly!

Here ya go 😊… One day I’ll have the kids help me enter my recipes in here the right way lol😂… Also… I’m revising this recipe where it’s even more simple and just like my Uncle Ike made it …. CRACKER CORN… 2cans- cream corn 1 sleeve- crushed saltine crackers 1 stick (1/2 cup)- butter 2 -eggs beaten 1/4 cup- evaporated milk 1/2 - onion chopped 1 T- sugar ( optional ) Pinch salt Preheat oven 350 Spray 2qt dish Sauté onion In bowl combine all ingredients Mix well to combine Pour into sprayed dish Bake 35 minutes or until set
