Cottage Cheese Ice Cream with Peanut Butter & Chocolate Chip
Cottage Cheese Ice Cream is creamy, delicious, filling, and loaded with protein. This recipe is a healthy alternative to traditional ice cream. Best of all, no churn is required!
16 oz cottage cheese (full fat)
¼ cup honey
2 tablespoons creamy peanut butter
2 tablespoons chocolate chips
1 tablespoon dry roasted peanuts (optional)
In a food processor add all ingredients and process about 45 seconds or until smooth. Transfer mixture to a freezer safe container and place in the freezer for 4 hours or overnight.
Remove from the freezer and allow to sit at room temperature for about 3-5 minutes before scooping. Using an ice cream scoop, scoop into bowls and top with additional nuts if desired and chocolate chips. Enjoy!
This recipe is FULL of protein and is very satisfying! Store any unused portions in the freezer in an airtight container.

    Just made this today. We used our home ground peanut butter (just peanuts, no oil, no salt, no sugar), local raw honey, and dark chocolate baking powder. Tastes awesome!

    My first time. I love Peanut Butter. I tried this recipe and it came out real good and creamy. The only difference is i added one fourth of monk fruit substitute sugar.

    Think I stumbled into something, got some cottage cheese but used "Sugar Free" Pudding to flavor it. 16oz Cottage Cheese, 8oz water, 1 packet "Sugar Free" chocolate pudding mix, blend together, consistency of soft serve ice cream without being frozen, no additional sweetener needed.

    Can’t wait to try this. I am diabetic so will try a no sugar sweetener instead of honey and maybe some sugarfree chocolate chips. Have also heard a little bit of vodka keeps it from getting rock hard in the freezer. Can’t wait to try this. Something healthy that is delicious.

    It looks delish and I love anything peanut butter or peanuts , actually any type of nuts. Haven't tried this one and probably won't because with everything added and the additional fat and calories, prefer to have regular ice cream.

    Some people say its too salty. I wonder if adding a little vanilla would help, plus not using salted peanuts. This is not low carb ice cream, but some people are happy with carbs; it looks like a great recipe for them. There are plenty of other low carb recipes.

    My mini processor is a 3.5 cup KitchenAid. It’s so handy and you can get one just about anywhere.

    So.... honey IS sugar and the peanut butter and chocolate chips also have sugar in them. Adjust for those and this is da bomb for anyone diabetic or watching their carb sugar intake.

    How does it scoop after being in the freezer for a day or so? 4 hours may not give it enough time to freeze hard.

    It does tend to get very firm after a couple of hours and I generally let it sit for a few minutes before serving. If you freeze longer or overnight just allow it to sit at room temperature for about 5-10 minutes and it scoops just fine. Thanks for watching and your question.     I have not made this with powdered peanut butter but I’m sure you could. Since you generally add water to the powdered peanut butter I would mix it first according to the package substitution guidelines and then add to the recipe.     Honey is much lower than white sugar in fructose. As it is partially digested from whole ingredients from the source it has a few more nutrients

    To many carbs in honey.two tablespoons is a quarter cup.honey is loaded with carbs it’s all sugar.
