Corned Beef with Cabbage & Carrots

This very traditional St. Patrick's Day recipe is a must-make when the holiday rolls around. Corned beef paired with cabbage and carrots is a unique meal that is super delicious! Cooked all in one pot with a few ingredients, this recipe will surely be a keeper!

INGREDIENTS
- 2-3 lb corned beef
- 1 large onion
- 2 cups beef stock
- 1 tbsp Worcestershire sauce
- 1 small cabbage (about 2 lb), cut in wedges
- 1 1/2 lb carrots, washed and cut in large pieces
INSTRUCTIONS
- Preheat oven to 350°F.
- Peel and slice the onion into wedges. Lay the onion in the bottom of the Dutch oven. Place the corned beef on top of the onion as if the onion wedges are acting as a roasting rack. Mix the Worcestershire with the beef stock and pour it into the Dutch oven around the corned beef. Cover the Dutch oven with the lid and place in the preheated oven until the meat is just beginning to become tender, about 2 hours.
- After the roast has been cooking for 2 hours, remove the roast from the Dutch oven and add the carrots and cabbage. Set the corned beef on top of the carrots and cabbage and cover with the lid. Return to the oven until the roast is easily tender when pierced with a fork, 1 to 1 1/2 hours.
- Slice and serve with carrots, cabbage, and crusty bread.

    Love, love, love corned beef and cabbage. But I chop the cabbage and sauté it with butter and seasonings. All time favorite!!

    Thank you so much for sharing this recipe! My Great Grandfather was 100% Irish! I love corned beef and cabbage, however, I have never made it before. I love your recipe because you do not boil the meat, I never boil anything. And I live a low carb lifestyle, and I do not even like potatoes. I hope I can find a nice grass-feed brisket like you have. I am going to make this tomorrow.👍😊🌹🙏💖

    If you use radishes to replace the potatoes, they have the texture of the potato and a very mild flavor. I love them this way

    We have corned beef and cabbage for New Years Day too for good luck! I am from the south and we always had black eyed peas, but my husbands family from the north always had corned beef and cabbage. Something about cabbage symbolizes money and luck and the corned beef just goes good with the cabbage lol! So I carry on his family's tradition with our own family! It's so yummy and my husband's mom's recipe is incredible!

    I guess I misses the whole process? Did you rinse the beef before adding seasoning? What temperature did you set the oven?

    No rinsing. The oven temp is 350.

    I agree mustard is a must have for corn beef. You should try my trick and make Horse Radish Mustard Simply combine 1 tbsp horseradish to 3 tbsp yellow mustard and use it as a dip

    Actually, I’ve never made a good corned beef until I tried his recipe and it turned out the best ever. Moist, delicious and not too spicy or salty. Best ever.

    I like you and I like your show but, I’ve lost interest lately. Im just not liking the dishes lately. I’m telling this to hopefully help you and maybe increase your number of viewers. in this difficult time we are in I would really enjoy watching you make a chocolate cake. A really good chocolate cake would help my mood a lot. Another recipe would be A whole fillet of beef with all the trimmings that go with it. I want to serve one to my friends and I want to see how you would do it. Also a fabulous Bloody Mary would be nice. Maybe you could make one from scratch in the juicer of blender. You could toss a couple of tomatoes, horseradish and a pepper, etc in the juicer and add vodka at the end with *garnishes. Also you made canned tomato juice a while back. You could make another Bloody Mary with your canned tomato juice also. I like you and want you to succeed.

    Hello! Honestly this comment is not constructive at all. I never intend to make everyone happy but someone losing interest because they have certain dishes is not something I find the need to listen to. Recipes need to be what the maker feels connected to and excited about that is exactly what I do! Hope you find what you are looking for.
