Cooking everything first in the dry seaweed and dry mushroom broth, then adding the miso at the very end actually makes the soup even sweeter. Miso soup should never be left to boil once miso is put in. You can also put the miso in right after you turn off the heat. Finely chopped green onion can be thrown in at last

Just to add, Miso shouldn’t be boiled becuz you kill the beneficial probiotics in it. I learned to make miso soup yesterday following a great recipe & I learned so much. Everything you said was mentioned in it :D

Yes I’m Japanese and have heard that a one Japanese rice cup is a little less than a cup in the US. My mom has told me to always use the rice measuring cup that comes with my Japanese rice cooker so that the measurements for the liquid on the rice cooker matches the rice.

I looked it up and it says Japanese rice cup is 180ml or about 3/4 of an US cup

@@ayamatsuiaya Thank you! Same as you I use my rice cooker cup (or just do the 3/4 cup conversion like you said). My joke was about her saying "US metric cup," as there is no such thing. It's an Imperial cup, perhaps, but not Metric. But all is well because I'm loving these videos.

i thought you were supposed to take the pot off the heat then add the miso, so as to not kill the enzymes in the miso....but you had the pot boiling......does it really make a difference if water is boiling or not?
