    I am from Serbia. Our main food is: dry beans and other beans, potatoes, and cabbage. And bread of course. I live in US, but I still love our traditional food.

    Graat video, Helen. I enjoy your videos because you address general concepts in addition to providing a mission-specific recipe. The ‘bean jeans’ is a valid and logical analogy, and I have never thought to listen for the sound of a partially hydrated bean compared to a fully dehydrated bean.

    According to Google University: Water: 2 cups = 500 grams 4 cups = 1000 grams 6 cups = 1500 grams Kosher Salt: 45 grams = 2.5 tablespoons For 4 cups of water a 3% solution would require 30 grams of kosher salt or 1.67 tablespoons 1 pound of beans is two cups. Like Helen wrote, volume can vary so a high quality food scale is your best bet. I've been soaking 2 cups of beans in 4 cups of water. I will try 6 cups and see if I get better results.

    After a lifetime of eating pinto beans my Dad switched to mayocopa beans in his old age. Years later I bot some to try but didn’t get around to trying for couple years! 🤣😂Even tho they were old they cooked up soft in less than three hours (without soaking) compared to fresh pintos taking up to 6. So now I think I know why he switched! I prefer the taste of pintos tho, like I grew up on. My Mom never soaked pintos but she knew how to select new crop beans and taught my daughter who also cooks them for 6 hours. I would like to try soaking to cut down on cooking time. I love a bowl of super soft beans in their bean broth. We call them “beans de la oja” - “beans from the pot” as opposed to refried beans. Thank you so much for sharing the love of beans! 😍

    +Arawak I can't reply to your comment directly because your youtube settings don't allow it. "Overnight" means at least 8 hours, though I usually try to do 12. How long to cook depends on the bean type. That info is in the video and in the link below the video.

    You might want to consider adding 1/8 teaspoon of baking soda per pound of beans. It aids in breaking down the cellular walls.

    You may or may not know the answer to this question. I live in Colorado at 7200', I know to increase cooking time. However do I increase the amount of water or liquid? Further, I am looking at a new pressure cooker. I am looking at the Fagor Duo vs. Fagor Splendid. The difference between the 2 is that the Duo has both 15psi & 8psi, the Splendid only 15psi. The price difference is quite large. In addition the Splendid doesn't come in an 8 qt size, only 6 and 10 qrt. For me 6 would be too small, if storage is not an issue is there any reason not to get the 10 qrt size?

    Hi Helen, Your video is so helpful! I have a 1 year old baby who LOVES beans of all kinds, but for the small amount he eats, I would not get through a pound even in a week. Do you have a suggestion on the best way to freeze cooked beans in small portions, and how to best use cooked frozen beans to be re heated? Thanks!!

    in the end of this video, I give you instructions on freezing. You can separate your beans into many small bags so that you defrost just what you need. Once they are defrosted, they are exactly the same as before freezing, so use in anything you want: soups, stews, salads, etc.

    I just tested this recipe with some chickpeas, at first I was skeptical. No peppercorns? Salt? Where's the bay leaf? Should I add a carrot and an onion to it? Then I decided to follow your recipe to the letter, and I am so glad that I did. Originally I wanted to use the chickpeas for falafel but they were so tender and delicious i ate half of them plain.

    Marc Latorre Congrats on perfect chickpeas! You are welcome to use a carrot, bay leaf and all that jazz. Sometimes I do, and sometimes I don't bother. Most of the time, my beans go into some other dish after they are cooked (soup, stew, etc), so they'll have plenty of chances to get flavored.

    I use my stove top pressure cooker and cook for 50 mins with natural release but I do not soak them and they come out good. It is the easiest way I know. Just make sure and pick out rocks and other bits and rinse well regardless of cooking method.

    Hello Helen, after soaking the beans in salty water after 24 hours, the beans are cooked in salted water or not and whether the water in which the beans are placed is hot or cold. Tnx

    After soaking, dump the salted water and discard. Rinse the beans in a colander. Place in a pot with cold unsalted water and cook.

    on the east coast it's in all supermarkets except for Whole Foods. I hear it might be harder to find in some states. I would go to Diamond Crystal Kosher website and they probably list where to buy it in different areas. Any restaurant supply store will have it. I wouldn't be surprised if you could call DCK and ask.

    That's a water filter. I believe it's Brita brand. We write down the last date we changed the filter to remind us when to change it again.

    yes. you can use any liquid as long as it doesn't have acidity (no tomatoes, wine, etc). all stocks are fine.

    got it...acidity is bad. Im wondering if there is a way of cooking beans to make them have a more crispier skin and a soft interior at the end (but no deep frying) that would be amazing...i always find beans as being to "soft" in my burritos...many thanks.

    i sometimes dry off cooked beans and pan fry them in olive oil (but you have to dry them very well for this to work)

    Ruple Thaker Yes, you can use a regular pan. Bring to a boil, turn down the heat so that the liquid barely simmers (don't boil or they'll break up!) and cook UNCOVERED until soft. The time varies depending on the variety. Since some liquid evaporate as you cook, you might need to add more boiling water during the cooking process.

    Noooo stop eating! You're tempting my buds. I love beans so much i eat beans 3 times a week. My grandchildren have also fallen in love with beans. When soaking overnight i first select by chance there are small stones and wash it after a 5 minutes soak. Then i soak overnight. That same water i use to boil the beans so i don't loose some nutrients if i throw away the overnight soaking water. Thanks i didn't know about adding salt during soaking.
