Abuela's treasured family recipe for mouthwatering Cuban-style tamal casserole (tamal en cazuela) is simple and delicious! In this step-by-step guide we will show you how to cook and season coarse yellow cornmeal with Cuban sazón. Chunks of seasoned pork and sofrito add to the flavor of this dish.

Step 1:
Season chunks of pork shoulder with salt and pepper. Cook the pork in a deep pot. Once fully cooked, set it aside. Reserve some of the fat from cooking for later use.
Step 2:
Rinse the coarse yellow cornmeal before transferring it to the pot where you cooked the pork meat. Fill the pot with enough water to cover all the cornmeal. Add salt to taste.
Step 3:
Start cooking the tamal en cazuela on high heat. Once the water boils, turn the heat down to low. From this point on you will have to stir constantly. The rest of the dish must be cooked low and slow.
Step 4:
As the water starts drying out, add more water little by little. Continue stirring non-stop. You will need to keep adding water until the cornmeal has cooked through and is soft. The more water you add, the more salt you will need to add as well. That way, the dish doesn’t come out bland.
Step 5:
A 24-ounce package of cornmeal will take about 40 minutes to cook on low heat. Once the cornmeal reaches the consistency of grits and is cooked through, it has finished cooking. Remove it from heat and cover while you complete the next steps.
Step 6:
Use the reserved pork fat/oil to cook your sofrito. Heat the oil in a shallow pan. Once it's hot, add onions, green pepper, garlic and a jar of sofrito. Sauté until fragrant. You can also make sofrito from scratch using our family recipe:

Step 7:
Add the pork you cooked earlier to the sofrito. Make sure you cover each piece in the seasoning.
Step 8:
Add the sofrito and the pork to the cornmeal. Combine well so that the ‘red’ of the sofrito dissolves completely in the cornmeal.
Step 9:
Serve and enjoy!

Agrega el cerdo que cocinaste anteriormente al sofrito. Asegúrate de cubrir cada trozo con el condimento.
Paso 8:
Añade el sofrito y el cerdo a la harina de maíz. Combina bien para que el 'color rojo' del sofrito se disuelva por completo en la harina de maíz.
Paso 9:

    Oh my I love your channel!! My family is from Colombia South America, but I live and was raised in Miami Florida so basically I’m 50% Cuban lol my daughter is married to a Cuban so we LOVE LOVE LOVE Cuban food and of course the Cuban people!

    Hi Yoyi! Abuela says she has never attempted it in a low cooker. She thinks it may not be possible because of the constant stirring that has to happen to combine the flavors. Plus it's hard to judge the amount of water you'll need if you're not constantly watching. However, if you try it in a slow cooker and are successful, please let us know how you did it! It would make the process much easier! Lol
