    if you need to eat massive amounts of calories like 8k per day and eat clean you are eating so much volume that you don't have room in your system for a lot of vegetables, especially since vegetables are fibrous which means they cause more gas and take longer to digest, the small amounts of veggies are basically just to get RDI of some micronutrients or some specific enzymes that help digest the real food.

    On the farm, we used to grind the meat with a hand crank grinder. When it was bigger stuff to grind, dad would belt it to a small motor. Farm Fresh!😁👍 AND I'd totally help Terry in the kitchen!🥰😉😁🍻

    You can ask the butcher's at Costco to grind up those ribeyes for you. They will normally be more than happy to do it for you. Just a tip to hopefully save you some time.

    I like to cook ground beef as is in the oven, then mix it in with rice and mushrooms with some salt and pepper. It's one of my fave meals.

    Fan from Brighton here! Been binging the channel all night. I gotta tell you, it hurt to watch you salt the beef before forming the patties. This guy named Kenji who many consider to be the foremost authority on burgers, swears you have to salt them just on the surface and right before you cook them. Salting too early gives them the spongy, elastic texture of a brat or sausage. Salting it right before keeps its loose and tender and (potentially) easier to get down for someone like you because you wouldnt have to chew as much. I think I saw you at the Walmart in Brighton when I was a teenager. It was shortly after the Denver post article and I wasn’t sure, but now I wish I had said hey. Keep it up, love the channel. Edit: I will give you credit for grinding it on the spot though, that makes a difference

    Yeah, running it through the grinder twice will eliminate the possibility of one burger having a noticeable difference in fat content. One trick I used to do when making patties would be to freeze the chub (10# tube of pre ground meat) until it was solid enough to cut it into patties using a meat slicer. Every patty will be the exact same weight and shape that way.

    When I did burgers like that as a chef I found the best way was not to wrap the lid so tightly and leave a flap off the end. The burger will conform the cling wrap to the lid just by pressing it in and by lifting the flap the patty releases much easier.

    I'm always surprised how much salt I need for ground beef. I toss in a good amount and I'm like "that should do it!" but then I taste it and it's still completely bland.

    Colin Terry’s placed third in the WSM competition a couple of times and won a bunch of other strongman events, Terry and Brian have been friends for a long time, both true veterans of the sport.

    Great tip Brian - If you freeze the meat for even 30 mins - 1 hour, up to 2 hours then grind it you will get much better meat and fat seperation. This servers two purposes, not just does it improve the texture, it will also aid in properly rendering the fat.

    You talking about fat is a good example of the calorie being a useless form of measurement. The individual measurements of each macro nutrient isnt just unique to each nutrient, but far more accurate to how the body works.

    what you said makes absolutely no sense. calorie is a unit of energy. macro-nutrients are protein, carb, fat. Protein and carb have 4 cal per gram, fat has 9 cals per gram, alcohol has 7 cals per gram. Calorie isn't a useless form of measurement, Bryan Shaw pays a guy a lot of money prob to to create a plan of what he eats, he eats fattier food for the extra calories because without the more calorie dense ribeye's he has a hard time hitting his 10-12k daily caloric intake.

    No it is absolutely not energy. It was a measurement designed to essentially measure energy tranferral from water, which had nothing to do with the human body or food. Its merely used by nutritional companies now as a way to fool stupid people into buying the literal crap that they sell. Scientifically, the calorie which is used to measure ''energy in/energy out'' is too simplistic in practical use to explain the many different things that happen in the body when eating nutrients. For starters, not every nutrient is used as energy. Every nutrient CAN be utilized as energy, but only in extreme cases (someone loading up on nothing but fat, excluding carbs and sugars from a diet almost completely, actual starvation.). Carbs and sugars are the bodies go-to for usable energy, since thats what we eat most of the day, but even THOSE have stipulations that make the calorie an inaccurate measurement, like if you ate the carbs before a workout or after a workout. The response from the body and how it uses that energy is entirely different in both instances, which is something the calorie cant predict. Another example would be intermittent fasting. If you take an obese person and their diet and change nothing but the window in which they eat that same food? They lose weight. How? By extending the amount of time in which your body is catabolic and burning fat. People also often tend to forget that carbs have different levels of molecular structure, ranging from simple to complex. Simple creates a spike in insulin, whereas complex doesnt, which effects how the body handles that energy. Again, something such a simple measurement can't fathom. A way i try to explain the fallacies of the calorie normally is by setting up a hypothetical situation in which i give 1 indiviual a diet of the same exact thing that he must eat for an entire year with nothing to drink but water, and he has to meet my caloric requirement of 10,000 daily with that one food, and is only allowed to workout 30 minutes a day. Now that ive set it up, lets say the first thing i give him to eat for an entire year is table sugar......think about that for a minute....does his 30 mins of workout a day change anything? No. What the calorie will try to tell you is ''10,000 a day is plenty of ''energy'' to survive!'', but scientifically, thats wrong. A complete lack of protein in the diet means death. Your body, which needs protein to live and thrive, will immediately start breaking down your muscles in an effort to maintain order, not realizing it shouldnt do that, because the increase in body fat and weight will be too much for your now broken down, weak muscles, causing you to quit working out that 30 mins a day. You'll sit down in a chair, never to get back up. There, you will die. NOW, set up the very same scenario again, but this time with chicken! Not only will you survive for the whole year, but you'll come out the other side looking nothing short of a greek god. My point is that your body doesnt understand what a calorie is, and certainly wont subscribe to the way that a calorie explains itself. It doesnt give a fuck about calories lol your body isnt a huge furnace, and all food isnt coal. Its much more complex than that, which is something the ''calorie'' will never measure.

    I know this video is old. But a little tip for your grider, keep all your grinder head parts in the fridge or freezer before you use them. It helps keep the temperature down at the blade and die. Just useful if your making lots of burgers and not cooking them all at the same time. Also, get some fat down to the worm before you turn the grinder on. The friction at the blade and die gets very hot very fast. Can start cooking your meat as it goes through.
