"Either Jim or I am working"is the correct sentence.

Kamran is correct: Either Jim or I am working. This, unfortunately, sounds weird. However, the subject that is closest to the verb determines the choice of the verb. In this case, it's "be" which is a hard verb to work with sometimes. Here's how I would write it to avoid an awkward sentence: Either Jim is working, or I am working. Hope that helps.

Yes. Alone each is singular, but together they form a plural.
