Come dine with ESC volunteers - Episode 1

First episode of our cooking tournament between the ESC volunteers with their special guests !
Rules : each roommates has to cook for the others and then the others rate the dish out of ten. The winner is the one who earn the biggest amount of points. Every guests can give a mark but only the roommates marks are taking in account.
Recipe :
For eight people.
Arborio rice : 500g
Mushrooms : 600g
Vegetable stock : 4 cubes
Onions : 2
White wine : 20cl
Fresh cream : 30cl
Parmigiano reggiano : 200g
Garlic cloves : 2
Butter : 2 tbsp
Olive oil : 3cl
Parsley : 6 branches

Prepare the mushrooms. Quickly run them under water, dry them and cut them into large pieces. Melt a knob of butter and fry the minced garlic clove for 2 minutes. Add the mushrooms and cook for about 3 minutes, adding the washed and chopped parsley at the end. Add 3 tablespoons of white wine and cook for 2 minutes until reduced. Add the cream and mix. Add salt and pepper and set aside.
Boil one litre of water in which you will dilute the stock cubes. Heat the olive oil in a frying pan and sauté the chopped onion for 3 minutes. Add the rice and cook, stirring, for 2 minutes until it is slightly transparent.
Add 10 cl of white wine (1/2 glass) and once it has been absorbed by the rice, add a ladleful of stock and stir. Once the stock is well absorbed, add another ladle, and so on until the stock is used up (about 20 minutes).
Add half of the Parmesan and the mushrooms, wait 2 minutes and then mix briskly.
Serve very hot with the remaining parmesan.
