Come along with me as I make homemade vinegar. I also forget to mention things on the first few days but I remember later...lol. To go with the theme. I also forgot to mention if you are using a glass jar to store your vinegar in I have found it is best to use a plastic sandwich bag in between the jar and the lid to keep the lid from rusting!

You don't have to use lemon balm. You can use any herb. That is just my favorite. I seen a few years ago baker creek had a mandarin balm that smelled like orange. I was really tempted to get it. That might be another option.

I have tried my hand at making homemade vinegar but never realized you could do it with herbs. Thank you for this! I have a couple of jars of absolutely gorgeous vinegar scobies any input I'm using these?

Yes you can make it out of just about anything edible. Some things do not smell good though. I have tried adding a mother/scoby and I haven't noticed it went any faster or turned out any better. It also made it a little harder to stir.You should experiment and try one with the mother and one without and see what you like better and if you notice any difference. Hi Kari. I was just wondering if the vinegar leaches plastic from the plastic bottle? Thanks for sharing.

According to google any acid liquid will leach chemicals out of plastic bottles. I used to worry about these things a lot. I ended up breaking a lot of jars and injuring myself. So I thought it might be more harmful for me to use glass since I am so clumsy. Also one night we broke 2 gallon jars of vinegar in our bedroom on the carpet and that was the last straw.
