Collecting Maple Sap & Firing Up the Evaporator - Zionville NC

Its January 23, 2023. A couple of weeks since putting in the first taps in sugar maple trees. This will be the 4th time firing up the evaporator for the season, to boil down about 22 gallons into a concentrate, that I will freeze with other batches and finish later in the season.

    I find some of my trees produce good and then the ones that don't take off and put out good towards the end of the season. I only have 30 taps out this year. I give it away to friends and family. I just enjoy the smell of a final boil.

    Damn, we went one state too far south when we were house hunting. We have a home in the upstate of SC, going to abandon NY when I can retire in the next couple years. Would have been nice to still be able to boil sap. I guess wife and I should have looked a bit harder in western NC mountains.

    Thanks, yeah its definitely a rarity down here. I'm pretty much at the southern most range of where the sugar maple tree grows, and the temperature range is obviously not as ideal as it is further north. I still enjoy it regardless.

    That's a nice sugar shack. The litte evaporators that SL has come out with has really moved the hobby forward. Getting ready to tap this week, we have 400 taps on tube. I will only use maybe 150 this year, I normally only run for 2 or 3 weeks before I get to tired to keep going. Southern Ohio, lots of people producing in this area.

    Hi Corey. First, sorry for your loss of Uncle Andy. Curious what you get for evaporation rate on the Dauntless? I’m currently using a homemade setup and have my eye on that evaporator, glad to hear you’re happy with it.

    Hi Bill! So the crazy thing is that I have never actually measured the evaporation rate on either my makeshift evaporator, or the Dauntless. All I can say is that there was a notable difference between the two; BUT there were also some factors at play (part of my learning curve) that could also affected the difference. I know that with my homemade evaporator I was losing heat all over the place, but I also wasn't using a trickle method of adding more sap to the pan, like I am now with the float pan (I was just pouring a lot of new sap in as things boiled down.) I also wasn't using fully seasoned wood as well. One thing that I did notice between this year and last year, was that in previous years, I was boiling out in the open behind the house. This year was my first year boiling in the sugar shack that I built, and that seemed to have also improved evaporation, because I was out of the wind, and the sugar shacked helped retain some heat.

    I get between 12-15 gph when I first start using good dry wood, and toward the end of the season when the pan is full of concentrate I get around 8-12 gph

    I'm only running 28 taps this year.
