Welcome Back To My Kitchen !! And today we are making one of Dominica's favourite coconut sweet treat Coconut Tablet

4 cups freshly grated coconut
skin of one small lime, chopped to 1 tbsp
10 small spearmint leaves
1 medium sized bayleaf crushed
1 tsp nutmeg
1 tsp ginger
1 tsp cinnamon
1 1/2 cup light brown sugar
4 cups water

Hi, they look very tasty, in Trinidad and Tobago it is called 'coconut sugar cake' but basically made the same way, thanks for sharing.

Looks delicious. I love making them but I put a little more water. Im st. Thomas it’s called sugar cakes and my sister in law said they call it coconut drops in Jamaica

oh man... i just tried this recipe but mine isn't sticking together at all. I had to let it boil for over an hour, still nothing. Maybe not enough sugar? I don't know.
