With seasoned and marinated pieces of chicken simmered in a rich coconut curry sauce, this will be one of the best curry dishes you've ever had.
For this Coconut Curry Chicken You'll Need...
3-4 lbs chicken (cut into small pieces)
3/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon tomato ketchup
4 sprigs thyme
2-3 scallions (chopped)
2 tablespoon parsley (chopped)
1/3 scotch bonnet pepper
1 cup coconut milk
1 1/2 tablespoon curry powder
2 tablespoon veg oil
1/2 medium onion (diced)
4-6 cloves garlic (smashed)
3 cardamom pods
1 cup water
4-6 grape tomatoes (optional)
2 tablespoon cilantro (chopped)

This video is almost 5 years old and still is my favorite recipe to use to make curry chicken!
I made your recipe for this and brought some to my Indian friend working and he would have sworn I had been cooking curry for years! Fist time ever your recipie is soo good! Thank you for sharing it with us and walking us through it!
Making this for a second time in 30 days. It’s such a hit. I’d also like to point out how easy this is. I marinated my chicken overnight and it turned out perfectly. It is also very budget conscious.
I made this last night for my wife; it was amazing! It reminded me of a restaurant or better. This guy is the man! I can't tell you how good this. I simmered in a separate pot chickpeas, carrots, potato and added it at the end just to bulk it up with more veggies. Wow is all I can say!

Was drawn to this channel for the "vegetarian" recipes, I have gone to a plant based diet and you have some amazing recipes here! Super Tasty! I saw this recipe and sometimes I can get some useful ideas to adapt to plant based. I had some really nice baby Yukon gold potatoes and made coconut curry potatoes just like this. I am absolutely blown away. I can't believe that is something that I actually cooked and it actually tasted THAT AMAZING!!! I am now completely hooked on this channel!!!

Hey Chris. As a substitute for coconut milk for someone who is allergic to it use goats milk and honey. Great substitute. My late wife had the allergy.

"My kitchen, my rules" I love that. People have to realize "Everyone" cooks differently. Recipes are made to be adjusted to ones' liking. There are no set in stone rules or laws for cooking or the utensils that we use. I don't like the wooden spoons either. I like my metal. My God-father was a good cook. Cooked for very famous people and he cooked and ate what he pleased. Lived to be 102 with NO health issues. (just passed in Dec. 2017) To each his own. I absolutely love your recipes. If you use something that I don't like, I just adjust it like any good cook would and/or combine recipes. Recipes are basic guidelines. Keep on Keeping on.

Gail Thomas exactly! My kitchen my rules. Everyone who cooks have different styles of doing it. People should be happy that they are learning to cook tasty food and all these homecooks sharing their recipes with them for free.
I tried this today. UT was delish. Next time I will be adding more coconut milk to keep it thick. Beyond that it was amazing. I didn't cut my chicken and cooked it first in the oven. I also added potatoes and carrots. Awesome! Easy to follow.

Hi Chris! I've been watching your videos like an addict! You are absolutely the best. I Just LOVE all Caribbean food. Eat it almost everyday. Very difficult to find many of the ingredients up north here in Wasaga, but every so often I make a trip down to the Brampton area to stock up. Just keep the videos coming. They are wonderful. I usually do a quick non autentic way of using butter and curry powder in heat so the powder can bloom, then add milk and add in my seared chicken,onions and I like potatoes. Then simmer 30 mins. In this cold weather curry is on the menu tonight at my house. Yum. Nothing else I cook taste close to it. I love those earthy flavors.

I just made this for my boyfriend for date night, however i fried some baby potatos first separately and added it to the curry same time when you add the chicken and omg it tasted so good. I combined it with coconut rice and pershwari nan bread and it was amazing. Thank you for this, my boyfriend said its one of the best dishes i have cooked for him! Deffo will be checking more of your recipes. ❤

dun.. check the archives and website for it. there are about 5 different roti videos/recipes.
It looks so gd,I think I like yr way if doing curry much better than mixing the curry with water then putting it in da oil & that splatters. Doing it yr way Chris,thanks again for great ideas & really recipes.

So... Instead of the scotch bonnet peppers, I used a habenero pepper. Also, I didn't use the cardamom pods, however; this is the best curry chicken I've ever made thus far.
