Clotted Cream for HighTea

This is a simple method to make clotted cream. All it takes is whipping cream, warmed up, then cooled down to create a rich, nutty, buttery cream. This cream is delicious on most things but especially, and traditionally, on scones. Perfect for High Tea Time.

    YOU are a queen! I have learned so much from you and I come from a family where we had a brother trained in France, my sister was a sous chef, my mom was from Biloxi so we had gumbos and creole dishes, my grandmother was B,ohemian and made unbelievable polish and German dishes and my dad was northern cuisine I cooked it all. But my moms kitchen for the holidays was a war of tastes. Watching you reminds me of those quiet comforting kitchen sounds when it was just the 2 of us. If you ever come to houston, you need to go to Old Towne Spring (especially over xmas) and visit The Queens Tea where they serve Scones with clotted cream. They actually bring a tea set and a tier for petit fours dish filled with a diabetics death certificate Thank you for the tie and love you put into your recipes

    Wow. You are so fortunate to be exposed to so many wonderful and different cuisines. High tea in Houston is going into the memory vault. The hustle and bustle of kitchen sounds , plus the smell of home cooking , takes me right back to my mothers kitchen. Love those memories. Happy tea time and thanks for watching.

    @@suzyrebelo Cream teas are delicious. Fabulous with good quality strawberry jam and fresh strawberries ( strawberry is the best and most traditional )🇬🇧Your cream looked amazing … I’m definitely going to try it … thank you 🙏 👍🏻🇬🇧💕

    Anna, Yes, store cream in the fridge. It keeps for 7 days or longer. I did bring it to room temperature before using it so it’s easier to spread. This is so delicious, a little goes a long way. Happy tea time.

    Where do you find cream that's 35% fat in the US? I can't find above 18%.

    Hi there. Just buy heavy whipping cream It’s between 30 and 36% fat. I don’t know the brand in the USA but I know you can get it at Walmart this is scrumptious. Hope this helps and you hanks for watching.

    Even the heavy whipping cream in the grocery stores is only 16-18% fat. What country are you in?

    @@annw1395 Hi there, I'm in Ontario, Canada "Great Value" brand , sold at Walmart , has heavy whipping cream. There is another organic brand called "Horizon" and "Land of Lakes" brand both are sold at Walmart . Sorry, I'm not familiar with other grocery stores in USA. have a good day

    It might just say “heavy whipping cream “ or whipping cream” and not actually indicate the percentage of fat. Good luck
