    I think part of the issue was that you didn‘t dry them enough! Fully drying fruit usually takes quite long but that would make them more stable and less like wet napkins :p

    The vinegar will do two things: it will lower the pH to keep the sugar from browning as quickly and it will inhibit crystallization to give you a nice glassy finish.

    The vinegar in caramel causes the sucrose molecules to break into glucose and fructose, which won’t recrystallize. It also lets you heat the sugar up to a higher temperature without browning.

    I believe I can help, not sure this is true but a best guess.... Slow cooking the pears causes all the cell walls to soften and disappear leaving behind the pulp and sugars as a sort of slush which when dried out goes transparent and the sugar will keep it in shape leaving you with a dried out pear slushie. Also a splash of vinegar in caramel is quite normal, it lowers the PH level of the caramel which helps stop the sugar from crystallising.

    Hats off to Barry about how quickly he handled those pears. After all, they have an 8-second window of ripeness, sandwiched between being rock hard and then rotting into mush. Also, pear lemonade sounds like a great way to spritz up your summer.

    The vinegar reacts with the sugar together with the heat and transfers the sugar to invert sugar. This has the effect that the sugar can not recrystalize so easy (or even never)

    I think it might help to let the pears simmer in the sugar mixture like if you were making candied lemon slices, which are also delicious

    Adding acid to a sugar caramel serves 2 purposes: 1) the acid breaks down some of the sucrose into fructose and glucose, effectively converting it into an invert sugar, resulting in less chance of crystallization. 2) the lower the pH the quicker it'll caramelize In theory this method works, and while in practice it does too, it definitely changes the final flavour of the caramel. This flavour change is compounded in caramels that are mixed with dairy as the slightly acidic flavour in a dairy candy tastes distinctly "off." It can also change the texture of this that need to set to a specific "crack" like toffees and hard candies. For these reasons it's not a very popular or widely recognised technique.

    Gosh, those were so thin they were pearly there. I've seen vinegar in recipes for hard candies, I guess it balances the sweetness, like citric acid is often in manufactured hard candies.

    Regarding the vinegar; my family recipe adds sherry to caramel to keep it from sticking together and getting hard as it cools, so it can still be stirred and gooey. I hope you kept some whole pears to caramelise on their own because they're delicious!

    No idea on the vinegar, maybe helps in some why with the "clearness?" I've seen candied things before, though haven't done so not sure, but I think I recall two: the inverse of this, putting the slices in the clear boiling sugar water, then in the oven to dry-out enough; or I've also heard of repeatedly brushing on simple syrup and putting in the oven to dry/firm and repeating as needed/wanted. Maybe you could think up some kinda Barry twist to candied fruit instead of the clear/transparent thing? Since really the idea here was candied fruit and not crisps/chips besides the sliced shape.

    If you want to dry out anything in the oven you should keep the oven open just a crack to let the steam out.

    drying them a bit more would help a lot. drying out fruit takes a while for sure. you still saw them dripping with juice, hence why they just flopped around and went soggy. overall this experiment could do a do-over since this one just went completely pear shaped.

    I think your issue is you need to cut them medium thickness & you need to let them dry out much more in the oven. I'd love to give this a try but can't afford to waste the groceries 😢

    They needed to be dried more I should imagine. Remove all the moisture and they should stay in shape when being dipped in the caramel.

    Lemons + Miracle Fruit. The pills work well as well. I mean, next time you decide to drink straight lemon juice, maybe pair with some miracle fruit. It's delicious.

    Couple of reason I think this failed. Moisture. You should have let the pears dry out before lemoning. Pears are mostly liquid so letting them air dry and patting with kitchen towel would've dried up even more of the pear juice. Also, baking paper. Your sheets are too harsh and get direct heat from the tray. Having paper is a lot less harsh on the food.
