Whatever you do, don’t ever rinse the stone. I didn’t see or read those care instructions, and since my first pizza was a total mess, I tried to rinse off the goo. I made several more pizzas fine, but one day, I noticed it was cracked. Fortunately, Bertello was kind enough to replace the stone, but they re-sent the care instructions, where it plainly says NOT to rinse the stone in water. Just passing that along.
