Claypot Chicken Chinese Sausage Rice Bowl

Here is a delicious, mouth watering claypot cooking you can make. Some viewers were asking for more claypot cooking recipes. Those cooked steamed rice , underneath are soaked with delicious sauce from the marinated chicken drippings and also from steaming lap cheong ( chinese sausages )over a period of time.
Here is list of ingredients: courtesy from Mr. Michael Taylor;
List of ingredients: created by HAPPY WOK *************
1 pc - - chicken quarter (chopped to serving size)
marinade: 1 tsp. - - each, dark soy sauce, oyster sauce
cooking oil & corn starch.
1 Tbsp - - cooking wine, 1/8 tsp. - - white pepper
4 pcs - dried shiitake mushroom (water to soften, slice)
2 oz. - dried salted fish (water soak to soften & sliced)
2 link- lap cheong (Chinese pork sausages)
2 oz. - ginger (sliced)
as needed - - - cooking oil
2 cups - - rice (raw)
4 cups - - water
rice seasoning: 1 tsp - - each, dark soy sauce & oyster sauce
1 Tbsp - cooking wine
2 stalks - - - green onion (cut 2 inches in length for garnishing)

    I use to date a girl here in the USA that lived in Hong Kong for a few years that learned to make this dish. She made it very similar but used dried shrimp or prawns instead of fish. Thanks for sharing!

    There are only small size companies that makes excellent - quality - clean dried fish. But name of those companies come and go or change name. I would seek, those thick cut dried fish that are yellowish to yellow honey color looking one. they are pack in with meat facing outward. So buyer can see their quality.     This looks very good. Will try it tomorrow for dinner. If I add water to the rice in the hot clay pot, won't it make the clay pot crack?

    I would not subject clay pot into shock with drastic temperature change in huge amount. But I suggest add boiled water instead. I start with low heat at first few minutes and gradually increase stove heat slowly. Thanks for asking.Thanks for watching.

    Be careful when using this method, adding water to the rice in the hot claypot may cause the claypot to crack. It's better to stir fry everything on a regular pan then add to the claypot to finish cooking (i.e. all ingredient are hot)

    OK, so you mean to say, " Did I put raw chicken in the top of the rice? ". My answer is: Yes, marinated raw chicken. It will be cooked by the steam , created from cooking the rice. Thanks for asking.

    That dried fish are made from large fish, that they fillet and made into dried salted fish. They are available in pre cutted into small portion. So you gonna go back to that asian grocery just for lap cheong? Thanks for watching.

    Hey everyone, there is a **MASSIVE** difference in quality between the high-quality Lee Kum Kee PREMIUM (look for the word on the label) Oyster Flavored Sauce he's using here and just regular Lee Kum Kee (or any other brand) oyster sauce. I've tried them all, and this one is the only one I use now. Truly deep and rich REAL oyster flavor. Worth the higher price.

    One more thing: if you can find Kimlan Super Special Soy Sauce, use it. Technically it's a light soy sauce (as opposed to a dark soy sauce), but it is very rich with flavor, partly because it is brewed with Licorice Root, which adds an excellent note to the profile. When you tilt the bottle and then right it again, you'll notice it acts very much like dark soy sauce in the way it adheres to the glass, but the flavor is a true PUNCH of light soy sauce like you won't get with the regular Kimlan soy sauce or any other brand. A little over five bucks a bottle here in Atlanta, and often you can only find it without any English on the label in Asian groceries, so have someone who speaks Chinese look at the list of ingredients and see if Licorice is in it. Label design on the Chinese-only version looks the same as what you'll find when you search for it in English in Google Images, so you shouldn't have a problem spotting it in the store.

    If you dislike soggy rice,you may use long grain type rice and use a little less water ( 1 part rice to 1 & 1/2 part water. ) thanks for watching.
