Hi everyone! :) Tonight for tea I made this classic quiche Lorraine! Very popular in the 70’s and 80’s but it’s kind of fell out of fashion how…but still loved by so many people. Very simple ingredients but surprisingly tasty with fantastic textures…it just works! Have a go and hope you enjoy,

Serves 6-7 people (I used a 23 x 2.5cm loose bottomed tin)
* 375g (around 13 oz) shortcrust pastry
* 250g (around 9 oz) bacon lardons (I used smoked)
* 200g (around 7 oz) gruyère cheese
* 200ml (around 7 oz) crème fraîche
* 200ml (around 7 oz) double cream
* 5 Medium eggs - 4 for the filling and 1 for sealing the pastry
* A good pinch of ground nutmeg, salt & pepper

    Quiche is a favorite at our house, but I couldn't imagine making it without green onions, or chives, or spinach.

    Same here. My mother used to make it every Saturday, and wasn't a weekend without it. I now make it for my family. Need the onions. Also, tsp of mixed herbs mixed in with the eggs ;)

    Nicely done. I make this often, its tasty and light for summer and most important filling. Very cheap also if you are feeding a family. Enjoyed that.

    I have been making quiche for decades. I learned of this recipe from my aunt and started making it when I was 15 (1975). I have been making it ever since. I also use some ground cayenne pepper too. I have tried creme fraiche before but I prefer a mix of cheeses instead. That said, this recipe looks delicious.

    Oh I do love a classic Quiche Lorraine! I wish that was an option in hospital right now but I can certainly make some suggestions once I'm out!

    I was surprised that you didn't have any onion in there - but I guess it's a matter of taste. I sometimes prefer just cheese and onion quiche - no bacon. A couple of years ago I was having lunch at our local garden centre where they have a limited menu but it is great quality. They apologised because they only had cheese and caramelised onion quiche. I just "went with the flow". OMG it was delicious! Sadly they haven't had it since, but I will try it again someday.

    We do a lot of quiches and frittatas at our house. You should have had a bite for yourself, as many people who don't like eggs by themselves will find a quiche or frittata very tasty.

    I always love recipes that give me a reason to go to the fancy cheese shop in town. Will definitely be giving this one a go. Love a good quiche. Perfect with a side salad for summer time brunch.

    Lovemaking quiche with a whole range of fillings when the children were small quiche was a hard word to remember so I got renamed scrambled egg pie 😂😂

    That looks bloomin' lovely... my Morrisons one won't be as good. Love eggs but I do like my quiche more creamy and so might have a go at your recipe. Mother's from the 1960s only used a couple of eggs and some whole milk with possibly some cream with the cheese etc and have lost the recipe - the perils of scraps of paper tucked into the Good Housekeeping Guide! Anyway, thanks for sharing.

    Cheryl; you say to prick the base in a lot of places. In my wee flat, there's only the kitchen, living room, bathroom and bedroom; will that be enough?

    I can't do quiche, fratatta or anything like that. I guess it's a textural thing. However, this does look very tasty. I remember my mom and grandma making quiche Lorraine when I was a kid (in the 80's).

    What oven temp Cheryl? You didn’t say, unless I missed it! I have a fan assisted, so would you say 180C - even for the blind bake of the pastry? Thank you :) x

    Did you try it? Cos personally I don't think it's that eggy tasting and if you make stuff like muffins, pancakes , cakes etc you also use eggs right?

    I have no idea why you called this "Retro" I think it is basic comfort food. I have made this in the past and even with my less than competant cooking it was delicious. I mean to make this but I would probably do the brocolli type one. The supermarket ones freeze well. Buy them regularly. Time to make my own. Thanks for the reminder.

    Sour cream? Not sure what brand because I don't know which country you are in. In the USA I prefer Daisy sour cream.

    I have made this in the past and I am fairly sure I did not use Creme Fraise cos I have no idea what that is. It is a while since I made it and I NEVER have complicated stuff around so I think it was probably just milk maybe cream. Speaking as an Electrical Engineer :-) it is just a custard sort of thing.
