    I am professional bartender myself. I can say that because I am living very comfortable working 3 days at week, and have a plany of time for myself and my hobbies. Remembering all recepies is not hard. Difficult part is doing looong hours (sometimes 17-18h). Dealing with drunk people. Dealing with dumb people and their egos. And speaking about bartending, do not confuse making 1 drink with good bartender. Good bartender think like IQ 1000 . Have all coctails in small finger and have 20-30 coctails at top of head to make for costumers, still talking with costumers, dealing with garnish, bar back disappearing, noisy environment and still smiling to you! And make your drink in 2min, no matter how is busy!!! That’s what we called multitasking.

    @@VeggieRice I've been bartending for over 10 years. I know what to look for & it's in the subtleties. You obviously don't know what you're talking about... which is typical. I've seen quite a few ppl who THINK they can bartend 😏 He has well developed muscle memory, he knows where everything is & every move has a purpose. As for his speed, they're making a video so of course he can't just fly through the drink. That's just common sense my guy. Another reason I know you're ignorant is talking about the REAL way to make an old fashioned lolll There are so many variations on classic cocktails & everyone thinks their way is right. If you had any experience at all you would know that... you absolute dingus 😂

    ​@Razyr whiskeys were very different when an entire sugar cube was necessary. We use less now because we've refined whiskey to be sweeter. Gotta keep up with the times.

    Eh, if you're in a place where the bartender is able to say "I don't have time to make one of those." It's probably a beer and shot kind of bar. In which case I say two things. 1. Order your drink based on where you're at. Nice cocktail in a shitty dive bar? Even if they did make it, it's probably not going to taste the way you want it. 2. Chances are that bartender is thinking that it's not worth it to make that drink for you. In the time to make your 1 old fashioned how many other beers/shots could they pour. Tip the bartender fat and maybe you'll get a decent old fashioned. @@jamesiyer4937

    @@driedink no she isnt. She works at a bar but a real bartender knows that a good cocktail comes from properly measured ingredients and mixing properly. Pouring is not an effective way to measure and not every single drink should be shaken. That shit may work for shitty college bars that charge you $2 for a drink but she doesn't actually know how to make well balanced drinks.

    @@docholliday4546 Simple syrup is way better in an old fashioned. Sugar cubes will not dissolve in cold liquid. You just end up with a slightly bitter shot of whiskey with sugar clumps floating around in it.

    Some criticism: Measurements on the liquor where on the short side, you shouldn't dump the ice block so hard and most importantly since that orange still had the sticker on it probably wasn't washed.

    Angostura bitters, from the middle Bar On Washington Island, Wisconsin and a man named Tom Nelsen during prohibition Created a health tonic from Angostura bitters in the Nelson's Hall and Bitters Bar in the 1930's and sold it as a health tonic. Bitters are 90% alcohol and since it was not created as a liquor or liqueur it flew under the radar of the federal agents now known as the A.T.F. I personally lived on Washington Island, Wisconsin and have worked as a bar tender and was a year round resident of the island . It is also the largest Scandinavian settlement in the United States and has a population of around 700 to 765 people year round. I also was married to a Woman who grew up on the Island but was not technically an Islander. We also worked several other jobs during the year to have year round work and self made business owners of most of the islands population of year round residents. I personally was the owner of the original *Stabbur Gift Shoppe* Also a professional photographer and off season building and maintenance. As was my wife and many other of the year round residents and business owners of the Island. So, if you're ever in Northern Door County Wisconsin and Get to the end of the road and find yourself at A ferry Cross at Northport called "Port de Mort" aka: *Deaths Door* buy a ferry ticket take you and your family across in your car to the Island and either stay all night at one of the little B&Bs on the Island of which the are few or take a tent ⛺ over and ask one of the many residents if you could be gracious enough to let you pitch a tent in one of the many islands open fields . Or just go hang out at the Island Cafe, Nelson's Hall and pub 1st bar on the main Street, or the "Middle Bar" bar as it's named because well it's the bar in the middle of the other two; or the Corner Bar and restaurant. And look up while your there and see the only Light on the island at the first 4 way stop 🛑 on the island and only one with a light on any of the islands in the area and on the other side of the street check out the only grocery store on the island , Mann's Store or go to Mann's hardware on main across the street at K&K Fiske Restaurant and The Granary Coop & hangout.     I love how quick people are to judge a bartender. Fun fact: 98% of the time (outside of dive bars and Michelin Star restaurants) you order an Old Fashioned this is how they make it.     I ran the bars at the governor's country club in Wisconsin for years. You're incorrect. Given, he's not muddling fruit because fruit didn't come in the "classic" old fashioned, but he shouldn't have used a high proof expensive sipping whiskey for a mixed drink, and most people prefer a sugar cube soaked with Angostura instead of simple.

    Looks closer to correct than most I've seen, but I've heard a lot of folks say that syrup is a bit of a cop out when it comes to a good old fashioned. I prefer a brown sugar cube muddled down with the bitters myself, but this is pretty solid for one made at a bar. I especially like that he goes heavy on the bitters, a lot of bars only do like 2 little dashes. If I ordered this, I'd have no problem with it. Thank goodness theres no smashed fruit cocktail in the bottom or anything crazy like that.

    At the bar I used to work at, we made a Demerara sugar simple syrup. Unfortunately, if the night is busy, you just don’t have time to stir a cube of Demerara sugar till it dissolves. The Demerara simple syrup was a good sub.

    @r_ elentless01 seems a bit extreme. Maybe with one of those japanese-esque dashers given that they seem to be less, but I wouldn't go over 2 or you'll just overpower the whiskey.

    I've made old fashions where if I didn't stir it the correct ammount of times they would complain but people say this rushed nonsense is an old fashioned? Guy must have been lucky or not had male Karen's who want their cocktails made correctly to the most miniscule detail.

    @@Vikkk07 not as important to stir for that long when serving on a rock/rocks. Also he was stirring with smaller ice.. I actually build my OF's over the cube and just stir in the glass until chilled and mixed.. Don't need to stir as long when it's not being served up.

    Suggestion. if you can put sugar cube instead simple syrup , orange bitter and Angostura It would be nice and stir it more at least 20 to 30 second.

    He puts the ice in at last because he doesn't want the ice beginning to melt instantly soooo there is kind of a theory with physiks behind this but every one makes it different also with the shaking techniques it's just what you prefer. I personally dont like to take simple sirup i like to use a sugar sirup and on top of that the angostura and a littlr bit soda to desolve the sugar but there is also no difference u get on first taste its both sugar with a little bit of water just like the ice thing every one has his own theories behind the way he makes things.

    @@Huenchen_mit_Reis well to keep the ice from starting to dilute you have to have the glass chilled and the drink stirred to proper temperate separately before pouring. I’ve also tried putting in ice ball in first and pouring sugar and bitters over it then bourbon over last and giving it very few stirs. It dilutes and changes as you drink. Just another idea

    I just create the cocktail in the glass instead of stirring it and then putting it in another glass with another rock. Also using your stirring spoon to set the ice into the glass doesn’t create a splash.

    Good trick for my home fashioneds is a craft ice ball made with fresh squeezed o.j...when done with 2nd/3rd one, smash up ice ball with remaining whiskey= delicious nightcap!!

    @@VeggieRice look, if i would go on a full spree, I'd comment on the overuse of angustora bitters, the unnecessary cherry/toothpick, the use of chipped ice for stirring, the understirring...that drink will be hella strong and a little too warm when he poured it but given the added ice cibe the customer can just wait for it to dilute. Also...please dont spill that much, it is always a pain to clean that up and working in a sticky environment is a little obnoxious.

    I'm not going to judge this fellow bartender, but The best way in my opinion to make an old fashioned is as follows: Rocks glass with big ice cube out first. Then, 1 brown sugar cube with 3 dashes angostura bitters and 2 dashes orange bitters. Muddle and add 50ml of a good quality bourbon. Stir for 20 seconds, then taste to ensure it is diluted to the right amount. (The right amount should taste slightly stronger, so that the drink becomes perfect about half way through drinking) Strain the old fashioned into the rocks glass and then release the orange essence from the peel over the top and press it around the rim. Nicely Cut your orange peel in a nice parallelogram shape and create nice designs if not too busy. Then add the orange peel inside the drink, alongside a maraschino cherry.

    Nice vid! good work. Tip: *if no Angostura in your stuff: reduce syrup to 50% of the recipe, skip the orange twist; replace the 4 angostura dashes and the .10 syrup oz with some "spiced" Campari (smashed clove and cardamom) 0.50 oz should be ok. Not the classic, but it works, you can garnish with some cloves... Cheers!

    One more thing I usually do is I cut the peel right on top of the drink. It's not that noticeable, but a lot of extra oil comes out of the citrus peel right at the moment of being cut. This way I infuse my drink more.

    Yeah it is. He stirred it in ice that appears to not be very dry. It will dilute and chill plenty. An old fashion should come stiff, so after a few sips it’s perfect. You never serve sipping drinks over diluted.

    @@nikooooo7661 I agree that it is better to under stir when it’s being ran to a table. This is being passed across the bar. It’s not diluted enough. Sure, it will be probably diluted in a minute or two but that drink will never be an acceptable temperature. I stand by my previous comment.
