Bun Dough Recipe:
1/3 cup granulated sugar
1/3 cup shortening
1 teaspoon salt
2 large eggs, beaten
1/8 teaspoon lemon emulsion, or lemon juice
1/2 cup pastry flour
2 3/4 cup all-purpose flour
4 packets (1 oz) rapid dry yeast
3/4 cup water (depends on the feel of the dough, you might need more or less)
Yield- 2 lbs
Combine sugar and room-temperature shortening in a standing mixer bowl, fit with a dough hook. Mix on low speed. Add in salt when sugar and shortening start to come together.
Add flavoring to bowl. Combine yeast and flour together.
Add flour mixture to the bowl, mix on low speed.
Add water slowly before flour is fully incorporated, then continue mixing on low speed until the flour has become hydrated and incorporated with the dough and isn’t sticking to the sides of the bowl.
Once all ingredients are combined, turn the mixer up to the next speed. Your dough is done once almost all of the dough is wrapped around the hook (your dough will be tacky once it’s done).
Flour your working surface, scrape out dough onto surface. Separate depending on the size of your sheet tray. If you’re using a quarter sheet pan, each tray will get 1 pound of dough. With a half sheet tray, the dough ball will be 2 pounds.
Fold dough into itself, roll into a smooth ball. Place onto a lightly floured sheet tray. Cover with plastic wrap and let rest in your refrigerator up to an hour, minimum 30 minutes.
Make your crumb.
Crumb Recipe:
5 ounces vanilla cake (store-bought or home-made)
1 1/4 cups brown sugar
1 pound (4 sticks) of room temperature butter or shortening
2 1/4 cup pastry flour
1 1/4 cinnamon
1 1/4 teaspoon baking powder
1 1/4 teaspoon salt
Add cake to mixer, paddle on low speed until cake looks like a loose crumb,
Add in brown sugar, pulse 2-3 times, then keep on medium-low speed, then add in your butter. Once incorporated, kick up the speed to medium and cream until butter has lightened in color.
Turn mixer off. Combine dry ingredients, stir with a whisk, add to bowl.
Pulse mixer on stir several times before mixing on low speed. Continue to mix on low speed until dough comes together.
Leave on countertop uncovered while preparing your trays to bake the bun dough.
Assembly-
Prep sheet tray by covering it in a thin layer of butter or shortening
Flour surface and lightly flour the top of your dough. Roll out rested dough until its a little longer than the length of the tray (the dough with snap back more as you work the dough longer).
Lift dough slightly from surface, this will shrink the dough.
Fold dough in half, place in tray, fold in edges to the shape of the pan.
Dock your dough using a fork or a rolling docker. Rest 30 minutes.
Lightly and evenly wet the surface with a pastry brush and water
Press large crumbs into surface of dough, fill in gaps with smaller crumbs
Bake at 325 for about 25 minutes in a convection oven, or 350 for about 25 minutes in a conventional oven or until the crumbs turn a light golden brown.
Rest on tray until cooled. Sift powdered sugar on top, portion and serve.

I'm not sure why he isn't getting more view he has great teaching skill he captivates the audience and is genuinely nice. I say amazing job I'm definitely working this into my regular recipes

Joe's tutorials are the best. He's so thoughtful in explaining the choices he's making, the textures you should be feeling while baking, and explaining how alternative ingredients will affect the recipe.

You can tell he has trained bakers before. He is so detailed, and tells you what things will look like at each stage. Perfect teaching! If your crumb cake doesn't turn out, it isn't because he didn't explain it.
I could watch him for hours he does a great job teaching and explaining everything

I love how you guys give all details of the recipe in the description. Please keep that going. Also, Joey should do more tutorials. He's really good at giving instructions and explaining the process so that we understand why each component goes in.
My grand parents, parents were from Hoboken. They loved loved loved the crumb cake. I think I’ll keep buying from the bakery and leave it to the experts! Well done on the video.

So, who ran the bakery in the 40’s and 50’s? I am originally from Jersey City and my father used to take a trip on Saturday morning to Hoboken just to pick up this coffee cake! Do I remember the name of the bakery? No! We moved to the Midwest in the mid fifties but every time they made a trip back to visit he would run and pick up a dozen and bring them back to freeze! We rationed them out like they were gold! I’m 73 and this video brought tears to my eyes! oh the memories!
I'm so happy yall made this recipe for this because i wanted to make this eve since i watched cakeboss.

I grew up in the Bronx many years ago. My family shopped at 187th Street in the Little Italy of the Bronx. Many Italian bakeries and Italian restaurants there too. Delicious foods, breads, pastries, cookies and cakes. Love seeing your items on Cake Boss. Reminds me of my childhood days. Delicious cannoli’s etc.

My mother was a baker, at home, she was amazing, when ever i watch Buddy do "old school" things on his cakes, it brings back such happy memories of watching her and helping her, if someone asked her for a special cake, she would find a way to make it and most times couldn't believe it was a cake, just like Buddy has done. Thank you for keeping it "old school" hope your sons will follow in your footsteps to keep the craft alive.

I love watching cooking videos. ' Have been doing this since I plugged in my first computer. Hands down watching Joe Faugno is watching the best speaker on the internet. He speaks clear, but most importantly he describes every step as he goes along and describes other possibilities or alternatives as he moves along. All the watching (and cooking) I have done this speaker cook, baker is absolutely the best of the best. I will be looking for more videos he narrates. Hopefully I find more with Mr. Faugno as the narrator. The guy really does it best. Keep instructing Joe as you explain each step of the way you are making baking come to life. Your love and passion for your craft shows from the start. Thanks for the motivation.
