Join Claire Saffitz in the Bon Appétit Test Kitchen as she makes cast-iron skillet pizza with fennel and sausage. Pizza dough is usually sold as a 1-lb. ball. You only need 12 oz. for this cast-iron pizza recipe. We used a 10" pan, so if yours is bigger, use a bit more dough. Cooking sausage in the pan before adding the dough infuses the crust with porky flavor.

    I think what makes Claire so relatable / enjoyable to watch is ... Even though she's a well-educated, experienced cook, she gives off this vibe of being right on the edge of not knowing what's she's doing. (Asking people around questions like what goes on pizza.) Makes her seem human and fallible, like we mortals are.

    Why didn’t she crush the garlic in a brad inspired recipe? ‘Cause u know when u crush it, it forms like this two part epoxy or glue, and that is the allicin, and the allicin is what’s really really good for you in garlic I believe.

    Thanks for this vid. I made this tonight and for those of you that want a bit more sauce, go ahead. The pizza crust will absorb some of the sauce during the cooking process. It's not a dry pizza even with the amount used in the video. It's easy and much better than one of those bake at home pizzas!

    I find that cast iron pizzas can take a lot of sauce, so I like to really lay it on and even up to the crust. You can also use a lot of toppings because of how sturdy the pizza turns out.

    i cook my pizzas using cast iron all the time, always come out great....... 1 tip is the best way to get the dough in the pan when is ripping hot is to fold the dough in half right before transferring to the pan. You wan to create a half moon shape essentially, place the dough in the pan with the rounded edge up against the skillet side and then unfold for full coverage on the pan. much easier than what Claire kinda fumbled around with and also much less of a chance of burning yourself on a 500 degree skillet.

    @@madmike017 I just cooked a pan pizza yesterday and the bottom was crispy. Just cook it on a pizza stone, not on the rack. Believe me, it works great.

    @@madmike017 My point is cast iron takes only seconds to heat up on a pizza stone. No need to fuss around with a super hot pan. Plus, you need to let the pizza rise. You can't do that with a hot pan.

    Finally made this last night. The store-bought dough I had on hand fought being stretched, but I finally got it to the minimum size for my 12" skillet. The directions in this video were excellent. Turned out great, and I'm told it's a must-repeat recipe. FWIW used queso quesadilla cheese, sweet Italian sausage, and sliced scallions in addition to name-brand five-cheese sauce. It took a full 16 minutes in my oven to reach the desired degree of doneness.

    Thanks Claire!!! Delicious!!! We're vegetarians, so we use Morning Star veggie sausage. We call it Pandemic Pizza (in a good way), because I started making it when we were craving pizza and the two pizzas we ordered in were bad. This is now the pizza we have every weekend! Cast iron skillet is HEAVY, but makes amazing pizza!!

    It's to go with salad as well.. plus there's half a pound of sausage the dough which is about 1/2 a pound and other toppings plus the salad which is plenty. She's going by serving size, not about how much you can eat but what's recommended.

    I made this for dinner last night, and it was delicious. A tip if you're not planning on using the toppings in the video: put a bunch of olive oil and garlic salt in the cast iron and let it heat up as your fat source instead of the sausage leftovers.

    Worst of all is when they are like "you don't put fruit/sweet stuff into food". Uhm, yes. That's one of the most beloved and tried combinations ever. Parmesan and honey. Ham and figs. Honey glazed pork. Barbecue sauce! Like literally almost every single dish is better with something sweet, something sour, something spicy, something salty, something warm, something cold. Etc etc etc etc. Plus, tomato is a fruit.. I actually think those who hate pineapple on pizza perceive the taste differently. Like "uhh it's too sweet!" when it's barely more sweet than the tomato sauce. That goes for half the people. The other half are just pretentious and think they know stuff when in reality they haven't a clue.
