Cinnamon Sugar Soft Pretzels Recipe (Vegan)

Warm cinnamon-sugar pretzels, is there anything better than that??

As I'm obsessed with anything involving cinnamon (especially baked things), it's obvious that cinnamon-sugar pretzels are right up my alley. I used to buy them from the mall near home when I'd go to the movies. Now I just make them at home so I can eat ALL OF THEM myself!
I've veganised my standard pretzel recipe here by replacing the eggs with a cooked flour-water paste. This helps make the dough super fluffy and soft, exactly what we want in a soft pretzel :)
You can use the base dough for any flavour pretzel you'd like, I've got some more details on that on the written recipe page on my blog.
As with most bready things, these are best the day they're made. If they're getting a bit tough, warm them up in the oven for about 10 minutes at 180C (350F) so soften them up again.

    already made them twice (cinnamon version + savory salt/sesame version). they're SO GOOD!! so soft fluffy light and tasty... and easy to make! gonna make them again for sure!

    Hi! Thanks for amazing recipe. I tried this today and it was amazing! It was my first homemade pretzel and I still can't believe it. I made half portion(4pretzels) since I have small oven and was so yummy. Much appreciate for bringing joy during quarantine. cheers!

    @@IzyHossack OMG I'm such an idiot! when I got the recipe online I miss read the measurements for salt and yeast as tablespoons instead of teaspoons hahah. So I basically gave my family sodium poisoning!!

    Hi! great recipe. Love the video. Question: why are you making the roux (water & flour) in the beginning? How is that changing the dough or the recipe???

    It's a method called the tangzhong method which helps produce a very fluffy texture in the finished bread and helps it resist staling. I like to use it in vegan breads to 'replace' the eggs! The roux locks extra moisture in the dough as the flour in the roux binds the water it's cooked with so you can have a higher hydration without the dough being SUPER sticky.

    These look yummy! Will be making them tomorrow. May I ask, why don’t you boil the pretzels in the bicarbonate solution before baking? Would it taste different if I were to do it the more traditional way? Thank you! Xx

    Baroqueroll9 thank you! I don’t boil them for two reasons: (1) is the extra effort! I cba to clan up a pot of boiling water and add another step onto the recipe. (2) is that it doesn’t give me the texture I want. Boiling them makes them chewier and denser. That is great if you want a more traditional pretzel but I was going for a very soft pretzel (like American mall-style pretzels) so boiling doesn’t make sense. Just brushing on the baking soda still gives them a slightly pretzely flavour without the different texture :)

    you can leave the baking soda out of the recipe if you want. It's just there for adding the dark pretzley crust. You can't really substitute it for anything besides lye (which is harder to get and also requires safety equipment to use)

    When you cook the flour with the water, the starch gelatinises and binds the water within the paste. This extra water is then incorporated into the dough so helps to make the pretzels extra soft/fluffy/moist without the dough being too wet.

    Thanks, Hannah! If you've used a gluten free flour blend before that you know works in yeasted bread recipes, then give it a go! If not, I'd say a standard GF flour mix won't work here, sorry.
