BAGELS
3/4 cup (170g) vegan Greek-style yogurt
1/4 cup (65g) pumpkin purée
1 tablespoon (21g) agave
2 1/2 cups (300g) bread flour
1 teaspoon (4g) pumpkin pie spice
1 tablespoon + 1 teaspoon baking powder (20g)
Pinch salt
AGAVE WASH
1 tablespoon (11g) agave
1 teaspoon (5ml) water
CINNAMON SUGAR OAT TOPPING
1/4 cup (24g) rolled oats
2 teaspoons (8g) cinnamon sugar
MAPLE WALNUT VEGAN CREAM CHEESE
4 ounces (112g) vegan cream cheese
1/4 cup (30g) chopped walnuts
3 tablespoons (45ml) maple syrup

Québécois here, Golden maple syrup is the first batch of maple syrup harvested at the start of the season. It is the lightest in colour and the most delicate in terms of taste. Then, there's Amber, Dark, and Very Dark. All of which are increasingly darker and deeper maple flavours (as they are harvested and processed later and later in the season), and they get more caramelized in flavour as you progress. Golden and Amber are the most commonly used on top of foods/when you don't cook them (like pancakes and in dressings), and darker varieties are usually recommended for when you use them in cooked/baked foods. :)

@@PlantifullyBased it's funny you naturally used the Golden for a sauce, and opted to use a darker, richer agave syrup for the baked bagels (your cooking intuitions are on the money)! ;)

Thank you! Hi i did cover that in the video at 5:10 time! 💕 but i haven’t tried this gluten free so i can’t speak to how it will work with replacing flour.
I love Miyoko's products, but for me, their cream cheese and Roadhouse cheeses are waaaay over cultured, to the point of being eye watering. I guess putting the cream cheese in a sweet spread or baked good would help dull that taste. These bagels look so much more interesting than the usual fare at this time, and I think pumpkin has a distinct taste, slightly nutty squashy, that really says "Fall," so I'll give this a go when it gets a little colder. We're gonna have a return to warm weather here in the next week, so I'll be looking back over your summer recipes again, LOL. Thanks for posting!

i agree the vegan butter is my favorite! this vegan cream cheese was a little too sour for my liking but it did work very well for the vegan cheesecake recipe i'll be sharing in a few weeks. so i think its not my favorite for eating on its own haha but better for enjoying with things! ugh yeah i dont know to me pumpkin really doesn't taste like too much but yes I hope you give these a try soon!! haha i know we are supposed to be back up to 80 degrees end of next week not sure what is going on!
How store this flour , should keep in fridge for a week?

i cover everything like that in my blog posts! From the FAQ section How long do the bagels last? Up to 3 days on the counter in a container. You can also freeze them and warm it up in the oven or microwave.

Am just asking how properly store flour , should the flour keep in the fridge for a week, the flour storage isn't mentioned in blog . Thanks😉
