I love cinnamon and I love to make breads, I found that for soft bread combine two different flour half portion unbleach all purpose flour and the other half bread flour. Work perfect for me, I use it in the bread machine. The temperature as you said is very important for a nice and soft dough . This way it will rise perfect . Takes time !!!! Bread making is an art.

Your explanation of why the milk should be scalded (reduce proteins) was something I have never heard before. And your demonstration of rolling towards you, brushing water along the final edge and using a serrated knife were also great suggestions. I have previously made a version of these a bunch of times but the centers of my rolls always tended to pop up because I rolled them too tightly - another great tip from you on how to avoid this.

OK so I've tried a few recipes for these now... your recipe is hands down the best ever! No need to look any further, this recipe is just perfect. And love your easy step by step instructions. I had absolutely NO questions, because you covered everything. Its fool proof! Thanks!

I made these and they were fantastic. It was my first time working with yeast and I think I should have let the dough rise more, but the taste was amazing! Thank you for the recipe.

I made only half of the batch because only my two brothers and I were going to eat them, and OMG they were the fluffiest, most amazing cinnamon rolls I've ever made. I've tried other recipes and this one was by far the easiest and most effective. With other recipes I've had problems with proofing, or they would not taste good at all, but this one is fool proof. Thank you so much!

I can't wait to try to make these. As a guy with zero cooking experience that just started cooking everything from scratch, I love all the extra tips. Not sure why people complain about it. It's not like you're wasting any additional time. Not everyone is an expert.

Scalding is no longer necessary for commercial milk as it is all pasteurized by law. That is, it is already scalded.

Brod and Taylor makes a home proofing box. It's NOT inexpensive, but it takes care of the problem of having variability in house temperatures brought about by seasonal changes. You can set the desired fermentation and proofing temperatures. Personally, I use mine just for bulk fermentation. With this small appliance you don't have to play with an oven, etc... It's tall enough so the bowl of my Kitchenaid mixer fits easily into it.
