Cinnamon Oats Baked Apples recipe is the perfect healthy dessert after meal. Perfectly tender apples, stuffed with a crispy oat and nuts topped with vanilla ice cream. Every bite is breath-taking and full of warmth.
6-7 apples
1/3 cup whole oats
¼ cup chopped pecans
¼ cup chopped raisins
¼ cup brown sugar
1 tsp ground cinnamon
2 tbsp melted unsalted butter
½ cup apple juice or apple cider
½ lemon, cut into wedges
1. Preheat your oven to 190C. Add the oats, chopped pecans, dried fruit, coconut sugar, cinnamon, and melted butter to a bowl. Then mix that together until it's well combined.
2. Core the tops of the apples (I used measuring spoon and it was perfect). Then scoop out some of the apple, so that you have a cavity for the filling. Just make sure you don't core through the bottom of the apple.
3. Remove the skin around the top. Transfer your apples to a baking dish and squeeze the lemon over the top edge of the apples. Then stuff the apples with the cinnamon oat mixture. Pour the apple cider or apple juice into the bottom of the pan.
4. Bake the apples for 40-45 minutes
5. Spoon the syrupy liquid from the pan over the apples before serving. You can also top them with a scoop of ice cream or whipped cream.
These will stay fresh in a container for up to 3 days in the fridge. Simply warm up one of the apples in the microwave. It actually tastes even better the next day!
