Crepes/Блины
Crepes are easier to make than you think. These crepes can be dressed up with sweet or savory toppings and any number of flavorful fillings. No special pans required and best part of all, you only need 8 basic ingredients!
If only you knew how often I make crepes for breakfast and as a dessert. In Russian, we call it "Blini". Usually, my plate of crepes is empty before I finish cooking the last crepe. Here is the recipe.
Ingredients:
680g milk
120g cooking cream
400g flour
4 eggs
3 tbsp vegetable oil
3 tbsp sugar
1 tsp salt
1 tsp vanilla extract
Instructions:
1. In a large bowl, crack 4 eggs. Add sugar, salt, vanilla extract and whisk well. Slowly add the flour, milk, cooking cream, vegetable oil and continue whisking. The mixture will be silky smooth and the consistency of cream. Cover the bowl tightly and leave for at least 30 minutes.
2. Heat the pan over medium. Pour 1/4 cup batter into center tilting and swirling pan until batter evenly coats bottom. Cook until crepe is golden in places and edges begin to lift from pan for 1-1.5 minutes. Lift one edge of crepe with an offset spatula, then use your fingers to gently flip crepe. Cook on second side until just set and golden in places, about 45 seconds.
3. Repeat with remaining batter, coating pan with more butter if needed, and stacking crepes directly on top of one another.
I love serving them warm, but they’re excellent at room temperature too.
Place a few spoonsful of your filling ingredient in the center of the crepe. Fold both sides over the filling. Crepes are delicious with toppings, too, such as a drizzle of melted chocolate or melted peanut butter. Or simply with cream cheese.
