今回は京都中山産の天然砥石を使った研ぎになります。
研ぐ包丁は青紙1号の切付け柳刃の7寸です。
最後にトマトで試し切りもしてます。

・使用感
 粒度は8000番以上な感じ
 刃物への食い付きも良く、色々な鋼材を研げる
 砥汁はでやすい
 霞の包丁も本焼きの包丁も研ぎやすい
 スッ滑らかな切れ味の刃がつく
・今回使用した包丁
 青紙1号の切付け柳刃
今回は僕の持っている中山戸前の感想です。
僕の持ってる中山戸前は青紙1号の包丁とも相性が良く良く研げます。
砥汁もでやすく、砥汁の量を増やしたり減らしたりして研ぎの調整がしやすいので天然砥石のなかでもかなり扱いやすい方です。
切り刃の仕上がりは地金は霞んだ感じになり刃金は少し艶のある感じになり綺麗です。
中山戸前は天然砥石の中では持っておきたい逸品だとと思います。

Nakayama Tomae, which I have, goes well with Aogami No. 1 knives and can be sharpened well.
It is easy to get the whetstone, and it is easy to adjust the sharpening by increasing or decreasing the amount of whetstone, so it is quite easy to handle among natural whetstones.
The finish of the cutting blade is beautiful because the bullion looks hazy and the blade looks a little glossy.
I think Nakayama Tomae is a gem that you want to have among natural whetstones.

    中山は素晴らしいですが、価格がね。良い砥石は日本でも少ないです。この動画のコッパも色は無難な砥石ですね。まずまずの品でしょうか。最高クラスは日本でも入手困難で購入出来ても40型以下で8-15万円ぐらいしますよね。研ぎ感、刃の切れ味といい最高クラスが中山です。
