Choosing Green Coffee; Replacing a Favorite...

"What do I do when a favorite green coffee has run out of stock?" How to make a substitute selection, that's what Tom discusses in this video. We tried to dress up a video that is basically a lot of talking with some photos of the origins I am referring to. Pictures are sorta random ... but I think the information here is very helpful.

    @joeldamianicigan Starting with an air popcord popepr works, but if people want to jump in, and prefer drum roasting, the Behmor is ideal and less expensive than the other options.

    docsimonson- I am not a pro but I do know a bit about coffee as well as long term food storage. The green coffee beans still contain quite a bit of moisture and are not supposed to be stored air tight like roasted beans. The oxygen absorbers will not help with this issue. The good news is green beans are supposed to be good for over 100 years in non airtight containers. Keep them in a dry dark area preferably cool. I would use a large unfinished clay Plant pot and loose cover.

    You could not be more correct. The sampler and hot-air popper arrived (a Toastless TCP-713); roasted a few batches... WOW! The last batch I'd cooked using an EL Salvador bean, your " El Salvador Majahual" variety hit what I say is very close in flavor to what I'm familiar with, with one exception; it's one the finest tasting coffees I've ever had and easily exceeds any brand of Colombia Supremo I've yet to sample. The flavors (like chocolate) just jump out at a Full City+. It's my new fav!

    Great explanation. As far as longer term storage goes, can you put the green beans in mylar bags with oxygen absorbers? I've heard of people doing that for storing grains.

    @sweetmarias Instead of absorbing moisture the O2 absorbers scrub oxygen from the container. It is like vacuum packing. You end up with a brick o' beans! BTW I love the Behmor 1600 I bought from you folks. I'm making better coffee now than ever.

    So do coffee bean crop vary as much as say grape crops? Many of the vineyards have very different results from their grapes due to weather conditions such as rain & temps. What do you recommend for a sweeter clean coffee bean? Thanks

    "Supremo" refers to the size of the bean and not the quality of taste of the coffee. Currently we don't have Colombia coffee in stock but take a look at our El Salvador offerings, since they share a few flavor notes with Colombia coffee.

    Hi Tom, l need help with my home roast, I'm have trouble with the timing of my roast. It always seems to take to long to get to first crack, and l can't tell when second crack has started. My roast looks dry and brown. When l brew it there is hardly any crema. What am l doing wrong. Regards Shane from Australia.

    You can try starting off with extra heat to get 1st crack to happen sooner and backing off a bit during 1st crack to allow for some space between 1st and 2nd crack stages. Shoot us an email at info@sweetmarias.com for more advice!

    @docsimonson I actually don't know what oxygen absorbers are - I know those little moisture absorbers that come in vitamin bottles and such - that would be bad... -T

    I would rather roast my🐓 own coffee beans but having never done🐓 it yet. As compared to someone roostering my 🐓coffee beans.
