🍀 Chonggak Kimchi
Ingredients
For the Ponytail Radish
9 lbs Chonggak moo, Korean ponytail radish with greens
2 1/2 cups Korean coarse sea salt or 2 cups coarse sea salt
3 cups water
For the Flour Porridge
2 cups water
5x5” dasima, dried kelp
2 to 3 dried shiitake mushrooms
3 tbsp all-purpose flour or sweet rice flour (you could also use 4 tbsp cooked rice)
For the Kimchi Paste
15 cloves of garlic
3 to 4 slices of ginger
1 small apple, roughly diced
1/2 of large onion, roughly diced
1/2 cup Yondu (you can use fish sauce or/and shrimp paste)
1/3 cup Maesilaek, Korean green plum extract or apple cider/juice
2 tbsp sugar
1 tbsp coarse salt to your taste
1 1/2 cups gochugaru, Korean red pepper flakes
2 bundles of green onions, cut into 2” long pieces

Modern Pepper always teaches how to make Korean food meatless and with meat, and of course Seonkyoung Longest. When I am looking for a particular dish and I can't find it, I always try both. Lol
Today is Feb 6, 2023 and I haven't seen a vid from Seonkyoung since this video was posted....I hope she and family are ok! Been watching her for years!

I can't tell you how happy I am that you went plant-based. For years I'd watch you and Maangchi and think to myself, "okay how am I gonna make this vegetarian?" Now I don't have to think about it because all of your stuff is basically vegan! Love your recipes, videos, and you (and Jacob lol). Thank you for all of your content!!

I think she looks much healthier since going plant based but she still over stuffs herself, which isn't an issue now but will be later in life.

I started reading the books you recommend, I also always wanted to go plant-based because its healthier and seeing you really inspired me. I used to watch this channel when i was in my worst mental state. Thats 2016 to 2018 and today its 2023. I was just thinking about this channel few days back but couldn’t remember the name, I thought I would check out later when i am done with work but then i forgot and right now i saw this in my subscription list and found this channel yet again and i am so happy. This channel was my happy place at one point of my life and am happy to find it again. Also i like watching you because you remind me of my best friend i used to have in my elementary school and those 3 years was the best time of my life in school but we parted way after elementary graduation.

I make 'traditional' Kimchi several times a year, and even though I use the same ingredients every time, because I don't measure it's always a little different.

The one I find at H-mart is like the raw one where you have to clean the insides about 10 times to get the irony unpleasant flavor out 😭 I failed the first time I made it but I’ve made it about 2 more times and it’s tasting better and better I was hoping you can put your technique and knowledge spin on it 😊❤️❤️ I hope you get to try it!

Can you add the mushrooms to the paste (in the processor)? I was wondering if they would add an umami flavor or if they would make the kimchi weird.

I’m growing ponytail radish this summer bc they aren’t available in my area. Chonggak kimchi is my absolute favorite kimchi and I haven’t eaten it since I moved back to the US 2 years ago. How many radishes would you say I’d need for a batch the size of this one?

In theory you can use any kind of radish. The flavor profile and sharpness can vary depending on the variety (also weather and the soil its growing in), which is why some people swear you can only use a particular variety. This year I grew a short (Korean?) type of radish, and was surprised that it didn't have as much heat/sharpness compared to the longer daikon type I also grew.

Wow! You do a really good job of cleaning your veggies. You might not want to be quite so thorough since some of the "dirt" on produce is good for us and contains Vitamin B-12 (or so they say).
Hawaii is a gardeners dream, but that state is even more liberal and tyrannical than Oregon is. (More expensive too) As for Kimchi? I prefer the Napa cabbage.

You do realize that the vegan versions of meat-based foods are more detrimental to the environment. Instead of pursuing your misguided crusade which doesn’t mitigate animal consumption you should pursue humane and sustainable animal husbandry.

Not sure what meat based kimchi means but traditionally we do use fish sauce, shrimp paste, or/and fresh seafood to make kimchi
