The Selmi Comfit professional panning system creates nearly perfect round chocolate coated items, with the ability to smoothly polish & decorate with color.
Panning is an original, artisan method of chocolate coating fruit and nuts (or any center) and one of the oldest technical skills of chocolate making. Chocolate is slowly added to centers in a tumbling coating pan. The speed of the pan’s circulation and the viscosity of the chocolate is carefully controlled by the chocolate maker. The friction created by the tumbling action in the pan distributes the chocolate evenly on every center.
The Selmi Comfit panning units optimize this process of coating products with chocolate. Their ability to control temperature and air flow gives the chocolate maker complete control over the process. Selmi Comfit’s can also be equipped with Selmi’s automatic spray system, which evenly distributes chocolate during the initial coating process.
