I made this cake for our Christmas dessert. I didn't have coconut milk or cream, so I just subbed an equal amount of regular cream and used a coconut baking emulsion instead of vanilla. I also only have two cake pans, so I just did two layers. Before assembling, I brushed the cakes with coconut rum for moisture and added a layer of fresh cranberry sauce to give it a kick. Best cake I ever made. Fantastic sponge and frosting!

That looks so wintery elegant! Is the shredded coconut unsweetened for both the batter and the coating? Just curious because I found the unsweetened to be bitter but I think sweetened would make it too sweet. Happy holidays and thanks for posting‼️

And for shredded coconut use from young coconut or half old coconut? I use coconut cream and shredded coconut from coconut fruit not the can.
