Dough
Bread flour 300g
Brown sugar 40g
Cinnamon powde 3g
Salt 3g
Instant yeast(high sugar) 3g
Water 145g
1 egg
Butter 25g
Brown sugar cinnamon cream
Softened butter 40g
Brown sugar 50g
Cinnamon powder 5g
Almond flour 40g
Whole egg liquid
200℃(392℉) at the top
170℃ (338℉) at the bottom for 18 minutes
Chocolate ganache
Dark chocolate 50g
Whipping cream (38%) 60g
Some nuts
Chocolate shavings

    I am making this bread but am confused about your baking instructions, “392 F” on the top and 338 F on the bottom for 18 minutes. Do you mean 18 minutes at each temperature, switching baking racks. We don’t have ovens that have 2 different temperatures at the same time. Thank you.

    Espectacular!, sólo una duda, cuál es la harina para pan?, la que nombran como cuatro ceros?, y la levadura , si se pone seca cómo se trabajaría?

    El contenido de proteínas de la harina panificable suele ser superior al 12%. Yo uso levadura instantánea, que es seca.
