Today I am cooking at home and making crispy chile rellenos for one. I am keeping things simple and crispy. I am going to char roast 2 poblano peppers, stuff with cheese, and fry until golden brown. The stuffing is versatile and you can also serve with a tomato broth.

INGREDIENTS
2 poblano peppers
2 large eggs
3 to 4 oz Oaxaca cheese
1/4 cup all-purpose flour
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp to 1/4 tsp black pepper
cooking oil for frying

    Excellent. Single dummy here who never learned from my mom how to make these. Plus the ones on TV are way too slickly edited. But this video is perfect. I prefer the long green chile from my 'hood in southern New Mexico. Thank you for this.

    Thanks for this recipe as a single senior it's hard to get used to cooking for one. I like leftovers but only to a point. I've always wanted to try and make it so I think I will give it a go.

    That looks delicious, and I love my chile rellenos just crispy, with sides. I think it simply gives you the flavors without fuss,and I love the crispy texture.

    I'm like you, I like mine crispy. Whenever I order chile rellenos at the restaurant, I always ask for the sauce on the side. I've gotten some strange looks, but I like that fluffy crispy texture. For me, that's what makes it so special.

    One of my all time faves. I’m partial to manchego cheese and a lightly flavored, brothy sauce. I’ll take chile rellenos over pizza every time. Truly a labor of love, but hey, I’m worth it.

    Looks so absolutely delicious!! I was taught to make them this way by a lovely Korean lady who owned a Mexican restaurant! I used to buy whole green chiles in a can and it was so easy but they are hard to find now. I will follow your recipe using the grilled peppers. Thanks Mama! 😘

    My roommate in college was from the Yucatan, I don't know if it's traditional but she is always took rotisserie chicken, pecans and cheese and mix them up and put them in the poblanos. And basically did the rest of what you shown, and served it with a spicy, sometimes, tomato sauce.

    It's interesting to see the regional differences of a dish. In Southern New Mexico, we often use Big Jim or Sandia green chiles, stuffed with Colby Longhorn style cheese, eaten with no broth. You did an excellent job with your batter, I so enjoy seeing how you cook!

    Thank you for using your hands. It’s a revelation! Lol, mom always used the shell, so much easier using hands. I made this this morning, yummy. After starting to char the peppers on my gas stove, I decided to use my husbands torch… so much easier. Then to remove the char I used a brush and water, also much easier :) Thanks for putting this out as it’s hubbys birthday and he LOVED it.

    Can't wait to try these enchiladas(and the chili rellenos from the previous video). I used your Mexican Rice recipe and my wife and I love. One of the reasons we would go to a Mexican or Tex-Mex restaurant is for the fantastic rice. Now I can make it at home. (We still go out to local restaurants because I can't make tamales.)

    All Mexican Familes have own style: I am 71, and my mom is still alive and made them this week. We never ever used any broth or sauce on stuffed peppers. My mom does not slice the peppers but removes the stem and stuffs them hollowed out. ( Banana Peppers or Cubanels ). She also whips up the egg yolks till foamy before adding to Egg Whites. We use munster cheese. The final big difference is never fried them in oil but on a hot griddle. Never greasy. I love them this way. SInce I was a kid I thought them as 'vegan fried fish". I love eating one in a folded hot tortilla de harina. I want mild. My Dad had a cast iron stomach and wanted Hot Banana Peppers that blew your head off. It is all good. I like seeing how Mexican recipes vary. My Abuelo the Master Class Cook was from Michoacan. My DNA analysis is 1/3 Jalisco Michoacan Native American and the rest mostly Iberian Peninsula with Palestinian Grandpa but 3 granparents from Mexico.

    When I lived in Arizona, my friend Ol made those but I think she baked her's . All I know is that it was absolutely delicious. She also taught me how to make tamales, because I used to buy them from a lady selling near my grocery store. I live in DC now, there are a few good Mexican restaurant. But nothing comes close to her cooking.

    In my neck of the woods (AZ) rellenos were made with Hatch and/or Anaheim peppers, stuffed with Longhorn cheese, and usually not served with broth. My very first relleno was eaten at a restaurant in Douglas, Arizona, and their coating was a plain egg. Any way you make it, they are delish!

    The recipe you shared with us. Chli relleno casserole. I really expanded on it. It is wonderful delicious. It's a combination of Chli relleno and Tamales with a creamy Pablano crema poured down over it. A hamburger layer with onions cumin chipotle powder which I make layers of Pablanos a layer of queso fresco Monterey jack pepper jack. Basically the kitchen sink. I had to stop because I was running out of room 🙃. Try it you won't be disappointed. I don't have an exact recipe I'm always cooking outside the box. I took it to work and fed everyone 🥰 I put masa flour lots of eggs. Will definitely make it again.

    OMG…. I have been trying to find this recipe forever. As a child, my family went to a restaurant Gay & Larry’s in Rubidoux, Ca. After 70 years it had sense closed. They never reopened. 😢😢The landmark was a huge sombrero outside along side the road. The Chili Rellenos were the BEST, nice and crispy, NO SAUCE. All of the menu, absolutely perfect, beef ground tacos wrapped in tissue, rice & beans very distinctive. I think the Rellenos were made with Anaheim chilies didn’t have poblano‘s at that time. 😢😢😢😢, but I love poblano’s. I’ll try them both. My family, we moved to the beach before my teens but we would always take the hour drive to visit. When I was able to drive, I’d take my friends over the years at least 15 - 20 people, a lot of times we’d stop on the way to Palms Springs. And you know,they always talk about Gay & Larry’s to this day. They’d go on there own, as well. Great memories.❤

    OMGodess of goodness! First time I ever ate or made CHILE RELLENOS I loved it. A very good recipe, a fluke as I felt it was a lot of work but had forgotten by the time we sat down to dinner and took our first bytes. Years later just ordered some from local restaurant … mostly oil, cheese and maybe that coating was egg. But the Chile flavor was gone … Chile has an ambrosia that your method of cooking brings out.

    My mom never made the broth. I didn’t learn about it until I was out of the house. Both ways are delicious. Although, I still make mine without the broth. Yourchili rellenos look perfect and delicious! Mine never come out fluffy like yours. I should try it again. Thanks for the recipe!

    I wish I lived next door. You wouldn’t have to be bothered in tasting all your cooking as I would gladly be your helper. Looks wonderful. Chili rellenos are my favorite but I have never tried making them.

    I love this recipe definitely gonna make it and I like the cheese queso sauce over the top instead of the red sauce but also I would eat just as is yummy now I'm hungry...thank you
