INGREDIENTS:
2 large whole chicken (hen) tough meat
1/2 cup of vinegar and salt to clean chicken before cutting to preferred sizes.
Ingredients for marinade: 6 cloves of garlic, 1 large onion, 1 tablespoon fennel seeds, 2 habanero chilis, 2 tablespoon of rosemary, 30 grams of ginger, tablespoon salt, 1 teaspoon turmeric, 4 sprigs of thyme; substitute with 1 teaspoon of dried thyme, 2 bay leaves, 1 tablespoon of parsley flakes, 1 tablespoon crushed black pepper.
Ingredients for frying chicken: oil for deep frying-amount depends on size of frying pot, 1/4 cup all purpose flour to lightly coat chicken.
Chicken stew ingredients:
10 large tomatoes blended and reduced over low heat.
2 cups tomato paste
3 large onions thinly sliced
6 cloves of garlic Thinly sliced
30 grams ginger finely minced.
Chilis for fragrance
2 cups of oil
1 heaping tablespoon of curry powder
Optional large red onion cut into bite sizes for garnish and crunch
4 hard boiled eggs also optional for garnish.
INGRÉDIENTS:
2 gros poulet entier (poule) viande dure
1/2 tasse de vinaigre et de sel pour nettoyer le poulet avant de le couper aux tailles préférées.
Ingrédients pour la marinade: 6 gousses d'ail, 1 gros oignon, 1 cuillère à soupe de graines de fenouil, 2 piments habanero, 2 cuillère à soupe de romarin, 30 grammes de gingembre, cuillère à soupe de sel, 1 cuillère à café de curcuma, 4 brins de thym; remplacer par 1 cuillère à café de thym séché, 2 feuilles de laurier, 1 cuillère à soupe de flocons de persil, 1 cuillère à soupe de poivre noir concassé.
Ingrédients pour faire frire le poulet: l'huile pour la friture dépend de la taille de la poêle, 1/4 tasse de farine tout usage pour enrober légèrement le poulet.
Ingrédients pour le ragoût de poulet:
10 grosses tomates mélangées et réduites à feu doux.
3 gros oignons émincés
6 gousses d'ail émincées
30 grammes de gingembre finement haché.
Piments pour le parfum
2 tasses d'huile
1 cuillère à soupe de poudre de curry
Gros oignon rouge en option coupé en bouchées pour garnir et croquer
4 œufs durs également facultatifs pour la garniture.

    My Ghanaian husband made this dish for me and I thought I died and went to heaven. He didnt use as many spices as u did but it was really good. I'm definitely gonna try your version.

    Ever since I seen how Africans and Caribbeans clean their chicken, I do mine the same way. Lemon and salt or vinegar and salt. You'd be surprised how many pple don't believe this process is necessary. I also appreciate how y'all seem to incorporate onions, peppers,tomatoes and garlic in so many of your dishes.

    My friend from Mexico does the same thing! She uses salt and lemon to clean hers. We are blessed to get chicken that is raised and processed by our local organic farmer and that is some nice raw chicken. Not smelly like chicken from the store

    There was a lady in Accra who had a stand on the streets selling this stew except she used goat and she would stuff it in a huge leaf. It was sooooo good!!!!

    Nigerians cook stew similar to this too, so do Gambians, Senegalese, Malians... It's ALL OVER Africa. Pour in some rice and water then cook longer and it turns to Jollof rice, Please respect and celebrate our differences. Nobody is stealing. Amazing video.

    This looks DELICIOUS. Eritrean/Ethiopian folk have an identical dish called Derho. We serve it with hard boiled eggs too but we don't fry the chicken. I will have to try that step!

    Like 223 I arrived late due to season’s mood 😂Hope they that came earlier haven’t finished the food. That fried chicken came out absolutely yummy and the stew perfectly red and thick. Love the lots of oil used it’s best for stews. And your salads... Jesus I want it all. Yuuuuuum😋😋😍😍❤️

    My boyfriend is Ghanaian and we are spending as much time as we can before he has to leave to go back on campus so I was excited to dive in and try another one of your awesome dishes!! We add EXTRA EXTRA spices bc we love hot and spicy!! Your channel has helped us a lot. Our culture difference is what we love all the way down to the food!!

    I have Ghanaian friends but I never heard you guys have this kind of dish. I like the way you cook it. To be honest it look like Ethiopian dish but different way.

    You’re right, there’s a close resemblance but only in appearance. The preparations are significantly way far off. The Ghanaian is tomato based where as the Ethiopian is onion and chili powder based. Both great recipes 🙏🏿❤️

    You already use enough onions, also Ethiopian use both tomatoes and chili depending on each individual. The difference is you fry the chicken that’s all. And you don’t have home made cheese.

    Good morning, I’m going to attempt this for dinner this evening. Purchased all my ingredients yesterday. Cleaned and prepped this morning at 6 am…will be starting the chicken around 11am (should be enough time for marinating). I’m sure it’s going to come out perfect like your oven roasted red snapper did. Thank you for sharing.

    Love your cookware!! I know I’ve said it before. If I’m honest, I’ll likely say it again when another piece catches my eye. The Staub dutch oven in that burgundy color is simply fabulous.

    Beautiful video, I am amazed at the similarities between Ghanaian cuisine and Caribbean cuisine. How we have retained so much even after being separated by time space and circumstances.     I cannot wait to try Doro wet! I love lots of onions and Doro wet is more onion based without tomatoes as in this recipe. The chicken is treated very differently also in Doro wet. Very different preparations and both great recipes👌🏾

    Honest review: This recipe has a LOT of steps. If you are American like I am, you may be used to recipes that are just a few steps. This is not that kind of recipe. This recipe is worth every single step. It is a perfect blend of natural spices, robust flavors and premium ingredients.
