Wow creative dish I will make. By the way Japanese and Italian white eggplants are less bitter. When you use American Eggplants use them smaller younger not as bitter as older ones. Learned this in cooking school from a French chef. Very nice recipe thanks for the dance and cool plates

Slice and then salt. Let stand. I put mine in a colander with a weight on top to press out all the bitter juices. Rinse well before using. Also, there is bitterness in the skin. If you can get the smaller eggplants, they will be less bitter. Buona fortuna!

As a cook for Marriott you salt the eggplant and let it set for a few minutes on a paper towel this extract the bitterness . And the peel is bitter too so you can remove it. Buy young eggplant the older the more bitter meaning riper as the seeds hold the flavor of the bitterness.amaerican and small Thai eggplants are bitter. Italian white and Japanese eggplants are best as their not as bitter

I think butter would be better than olive oil. Cheaper and will taste better. This is America and we got butter.
