    CHICKEN SAUCE PIQUANTE 4-5 lbs of Thighs, Legs & Wings Garlic Salt & Pepper (to season chicken) 3/4 Cup Vegetable Oil 1 Cup All Purpose Flour 1 Yellow Onion 1 Green Bell Pepper 2 Sticks of Celery 4 Cloves of Garlic 1 (6 oz) Can of Tomato Paste 1 (14.5 oz) Can Fire Roasted Diced Tomatoes 1 (10 oz) Can of Mild Rotel 2 (15 oz) Cans of Tomato Sauce 2 Tablespoons of Sugar 1 Tablespoon of Parsley Flakes 1 Tablespoon of Cajun or Creole Seasoning 1 (32oz) Container Chicken Stock 2 Cups of Water Start out by heating a large pot and pan over Medium/Low heat. Chop the onion, bell pepper, celery, garlic, and set aside in the fridge. Prep the chicken by seasoning with generous portions of garlic salt and black pepper. Next dust them off with a light coat of flour. In your large pan, add a thin layer of vegetable oil. Drop in the chicken one at a time. Sear each piece of chicken until you feel they can easily flip. If a piece feels stuck to the pan, just continue to sear until it can easily flip. Once a piece has been seared on both sides, remove that piece from the pan into a bowl off on the side. While the chicken is searing, you want to get started on the roux. To your large pot, add the 3/4 cup of oil, and 1 cup all purpose flour. Begin consistently stirring until you reach a peanut butter color. You will also want to keep an eye on your chicken. Try to mange time between pot and pan evenly, to prevent burning anything. When all pieces of chicken have been seared and moved to a bowl, add the chopped vegetables into the large pan. Stir the vegetables around the pan so that you get any remaining drippings that were leftover from the chicken. Meanwhile continue to take time to stir the roux. After about 5 minuets of sautéing the vegetables, add the tomato paste. Sauté for another 10 minuets. Next add the two cans of tomato sauce, fire roasted diced tomatoes, mild rotel, container of chicken stock, sugar, parsley, and cajun seasoning. Stir well. By this point your roux should be a peanut butter color. Slowly add in the tomato mixture to the roux. Blend the mixture evenly. Next add 2 Cups of water and stir. Add the chicken to the pot, and push each piece down into the sauce. Bring to a slight boil, cover, and let simmer for 2 hours. Cook some rice, and enjoy!

    The Cajun Ninja Hey Bruh, You see all that red gravy you calling sauce picante? Mais, how come you called all that red gravy with ya catfeesh, a court bouillon? Dats catfish sauce pricante in dat other video, all day long until I sop da pot wit some French bread, for dessert.

    You can mix the flour and oil in your cast iron skillet or Dutch oven put it in the oven and bake @350*- stirring at 10 minute intervals until desired color. Works great and gives you time to do the rest. That sauce piquant looks delicious! Ca C’est Bon!!!

    In your experience, how large of a pot would work for this? I currently don't have a Magnalite oval pot, but do have a 6 quart Dutch oven. Would it be large enough?
