Chicken and broccoli are often paired in stir-fries, pastas, stuffed potatoes, and soups, but for whatever reason, you don’t often see them together in curries. I’m hoping to change that with this very easy, and incredibly delicious coconut milk-based recipe.

This video was re-uploaded after a small but important edit. A certain historical reference that I've used many times before, thinking it was a clever juxtaposition when talking about separated vegetable parts, was found by many viewers to be tone-deaf and poorly timed. After reading all the related comments, I had to agree.

I consider myself a novice cook having only started seriously cooking about 9 months ago. I made this dish tonight and it was amazing. Hadn't tried much curry in the past and was never please with the texture when I had, the broccoli changes that and putting it over rice lets the sauce seep in without it feeling like soup. I've been cooking for my elderly parents during the pandemic and both of them really liked this dish. Thank you, Chef John.

I just made this and it came out PHENOMENAL. I also took some creative liberty and added peanuts and chopped peppers, then served alongside lemon rice.
I've made this twice now...The first time I messed up because the pan was too hot and I burnt the spices...I recovered by whipping up another batch of spices and it was good. My son said the best part was the broccoli. I made it again tonight, did not burn the spices this time, and my house smells fantastic. I added the chicken stock first though and used it to deglaze the pan, then the ketchup and lastly the coconut milk then whisked it all together. It was really good this time and the best part is there are leftovers for lunch tomorrow. :)

Hi Chef, All, I made this today with a few alterations ... I never could stop myself from cooking and exploring tastes! I put an additional two tablespoons of Garem Massala - curry spice in the spice mixture and replaced the broccoli for grean beans that I parboiled (otherwise they don't cook easily and stay too "al dente") and I added a can of chopped tomatoes after frying some choped onion, garlic, red peppers (lomboks) and fresh ginger in the butter after frying the chicken breasts.Only then I added the can of coconut milk and followed the recipe of the Chef furter on. It turned out great, thanks for the inspiration and hacks! Me and my daughter almost ate our plates!!!

Can I just say thank you Chef John for not appeasing the food stylists and sticking to your own on cooking the broccoli completely.. I fully agree.. while it may look good extra green and 'pretty' that doesn't mean its going taste the scrummiest.. and when we're talking about curry, you want scrummy.. awesome recipe!!!!

I made this but with chick peas, peas, and ground turkey. I reduced the spices by a quarter and didn't put any stock/water. It came out so flavorful and delicious. Thank you chef!

Made this.... when Chef says reduce the heat... REALLY REDUCE THE HEAT... as in, let the pan cool quite a bit before adding the coconut milk. Otherwise it completely burns/scorches and puts a funky taste on what is otherwise, another amazing Chef John experience.

My stomach doesn't digest crispy broccoli. This was perfection! I'm making it!

Just made this. Excellent!! One question. Can I put some butter or ghee on a roll cut in two, put some of the curry spice on the roll, and then broil it until toasted?

I made this last night for the wife. It tasted nothing like the curry I am use to eating. BUT we both loved it! I added some baby sliced bell peppers and put it over white Indian rice. I could also see adding some large sliced mushrooms.

Love the recipe John but just a heads up the secret to a great curry is LOTS of onion fried in the toasted spice mixture. Don’t forget the Garam masala!

When I was in Thailand...we got these packages of "curry paste"...I liked the green. So I love Chef John and this show...and am confusicated..? Are those dry spices "curry"??

Indian "Curry Powder" has always been a mix of the dry spices you see in this video, plus more, for example ginger, and other local differences. It is vastly different in flavor from the Green Thai Curry you probably had in the packages. I favor the green thai curry.

Another good one. I would dice up the chicken ahead of time - will provde more surface area for the rub and save a step. And as chef mentioned, you could blanch and shock the broccoli and just add it in at the end - would preserve the color and texture. He’s definitely right - it’s a technique video and not so much a recipe.

This looks very good. 😁 I think you were lacking a paste or some extra aromatics. Every time I've made a curry without a paste it feels like it's missing something. 🤔 I also think you should have omitted the chicken broth, or let it simmer uncovered to thicken it up. I prefer my curries to be more viscous so that it clings to the rice or whatever I intend to serve it over. But, if this is how you like your, no judgment. 🙂 Thanks, chef! 💜💚

Chef John can you substitute the coconutmilk with something else?
Ok so from the UK , where we probably eat almost as much curry as they do in India . Thats going to be a pleasant but I would think a very creamy curry , which is fine if thats what you like . But it misses a couple of steps . Before you put your meat into the oil add. Mustard seeds/ cinnamon stick/ Bayleaf/ star anise/clove. Cook for about a minute or so .Remove everything except the mustard seeds . Garlic? No no 50/50 garlic/ginger. Here in the UK you can get it in asian shops pre made . I can cheat , Pataks in the UK do curry paste with all the spices chucked in , but if your doing from dry in the US , garum masla you need a bit as well as the spices in the recipe. That was a lot coconut milk . It’s very heavy on calories , I use chopped tomatoes , tomato puree and then when its reduced add about a third of a tin of coconut milk . My recipe was given to me by an indian friend , as a basic curry . If you like heat add some chilli .
