When I was a little girl, if I was well behaved when I went shopping with my mum, she would let me choose a packet of treats as a reward. Chewy toffee was normally my first choice.
I like cooking toffee at home. The sweet smell from the caramel is incredible. When I look at the caramel bubbles in the pan during cooking, it seems to take me back to my childhood.
記得小時候跟媽媽去賣場,如果我表現良好,媽媽就會讓我挑一包喜歡的零食當獎勵,甜甜蜜蜜,奶香十足的太妃糖常常是我的首選,現在長大了,對太妃糖的喜愛仍不減。
熬煮太妃糖時,聞著焦糖散發出來的迷人香氣,看著鍋內翻騰的焦糖泡泡,小時候嘟著嘴咀嚼太妃糖時的幸福滋味油然而生。
Ingredients 食材:
Whipping cream 鮮奶油(乳脂含量35%以上)300ml
Unsalted butter 無鹽奶油 125g
Granulated sugar 白糖 300g
Salt 1tsp 鹽 1茶匙
Vanilla paste 1tsp 香草醬 1茶匙
Salt flakes (optional) 鹽之花(依個人喜好)
Cook the caramel until 125C (257F)
焦糖烹煮溫度攝氏125度(華氏257度)

    請問我煮好以後為什麼突然油水分離, 難道是因為我最後加上了香草汁? 焦糖突然遇到了冷的 香草汁才會油水分離嗎?

    您好,想請教幾個問題,我第一位隨便做成功了,之後做發現關火後表面浮油,可能是火候的關係。但是我有買溫度計,發現到125度煮時沒有您的顏色那麼深…. 但是關火後是不是因為才加入香草精,造成溫度有遇冷降低的問題才會又浮油呢? 期待您的回覆❤

    我成功了,我就是煮到跟他同樣的顏色和濃稠度,我沒有用溫度計,一切憑感覺🤣 你應該是沒有攪拌, 我一開始沒有攪拌, 以為攪拌就會反砂 可是我發現如果不攪拌就會它就會焦掉, 所以一定要攪拌,我一直攪拌都沒有看到反砂的狀況, 所以你可以放心的攪拌😆👍 還有我發現如果煮久的話就會變得變成硬糖,如果沒有煮久的話就會變軟糖
