No, it's not... I get a better bark on brisket than I do pork, but I don't cross cut or put any sugar/high fructose corn syrup on either. Just a heavy pepper and salt rub, maybe the occasional garlic and onion powder in with it, but the pepper and tons of smoke is how you get the best bark. Burnt sugar is nasty, but burnt pepper just gives great texture to the meat. That's how pastrami is made, and it's famous for it's bark.

Pork and beef are different but you're right with beef you need nothing but salt and pepper and it will come out absolutely amazing. Pork with me I'm adding sweet sugary notes like meat church honey hog or howtobbqright killer hog. I'm doing 2 Pork butts next weekend and I'm definitely going to try this method Pork butt but such a hefty cut it takes a lot to really to really screw it up

Get yourself a green egg, lump charcoal. On a full load you can cook for 16 hrs and still have charcoal left to cook chicken the next night. I’ve done it before.
