They both should be reversible
12:27 Can the reason why NH4+ undergoing hydrolysis also be because Cl- cannot undergo hydrolysis (because it is a group 7 element) or should we just still with: "because NH4+ is the cation of a weak base"?

10:17 Will the explanation of why CH3COO- undergoes hydrolysis be: "The ethanoic acid ion undergoes hydrolysis because it is the anion of a weak acid"? (because we know that the conjugate pair of a weak acid is a strong base)

Double arrows indicate the reaction is reversible, dependent on temp, pressure, concentration etc. Read up on Le Chatelier's Principle.

Salt of strong acid and strong base like HCl+NAOH do not undergoes hydrolysis because it dissociated completely thus having a pH of 7(neutral)
