    Great assembly video. Mine will be here in a couple of days. Been q’n on ceramics and recteq pellet grills for 35 years. Now that I’m retired I’m ready to learn a stick burner.

    I think I have an older version of this model without the top shelf. I’ve had to clean the rust off the firebox twice but it’s a losing battle. Now that the firebox/cooking chamber connection point has rusted through I’m looking for something new. Might be the new model but I really want a reverse flow:

    ​​@@AndersonsSmokeShow I have a Traeger, Weber Kettle, Pit Barrel Cooker, and I just can't fight the urge to get one of these. I'm guessing it's worth it? I like the process more than the end results. It's just fun to bbq.

    The Grand Champ is a good entry level offset. I think for the money it’s pretty decent, but if you’re willing to spend a little more, there’s definitely better options out there.

    Can you use this smoker as a grill as well? I'm seriously considering buying one of these smokers as my first smoker was a char griller and lasted for over 7 years and maintained temps well right out of the box without any mods and had minimal smoke leakage as well that still gave my food great bark.@AndersonsSmokeShow

    Did you not take the cap off for the grease drain? And does it have a spot to hang the grill grate tool on it?

    my cooker like this sits.... too low on the firebox side... anything like jucies that collect in the bottom of main cood chamber all drain to the firebox side and drips on my pourch concrete.... I put a level on it... so I got two peices of 2x4 and put one under each of the steel wheels and that gave me 1/2 a bubble drainage towards the left side or smoke stack side of cooker. I get no more dripping at the firebox connection. But my cooker sits you can see the angel . Is this a problem experienced by other's cookers? I seen 1 guy on youtube with wheels elevated like I did. I just wonder if it effects the actual cook or air flow from firebox to exhaust pipe. My first ribs were not fit to eat. I had too hot of a fire ... it burned fast but every time I put more wood on... I got bad smoke even with pre heated peices. I guess I have a lot to learn about fire managment.

    So I typically use a drum smoker (ok joe bronco) but would appreciate the extra space this would afford me. Would I be able to set up the basket the way I would on my drum with lump and wood chunks and adjust intake to achieve the "set it and forget it" I get with my drum smoker? Thanks in advance.

    How is this thing working out? I have been thinking about getting this one. It's a little bigger than I need but I love the offset. I have an older Char-Griller off set that I got several years ago. It was cheaper and a good one to learn on but we live in a windy area by the ocean and the sea breezes in the afternoon blow right through the older cheaper model. The door set up on the Grand Champ XD looks a lot tighter and I would hope that would make a difference? How has it worked out and especially on windier days?

    @@AndersonsSmokeShow Well I finally ordered one today. The only mods I'm thinking about is some harbor freight tire wheels 'cause our driveway is crushed stone and this thing weighs a ton. Also, maybe use high heat gasket around the doors instead of the felt. That seems to make a good seal and I can match it more perfectly and durably to the actual smoker.

    As I'm watching this again, I'm wondering the comparison to the gravity 980, for one the length and width of the inside of both this one and the 980? Also how accurate is the installed thermometer? Thanks in advance

    I do have a comparison posted between the two. In terms of temperature it seems to be accurate in that location, but temperature does fluctuate from left to right.

    I know I'm a couple of years behind the game, but I was curious about the seasoning. Could you use a higher-smoke point oil, such as avocado oil, for doing the seasoning?

    Hi-temp oils, in my opinion, are what's required. I like grapeseed. Aaron Franklin also suggests hi-temp oils too.

    WoW!! I wish I would have looked around better before I spent the money on the 560. I had no idea these even existed for that price, maybe next time.     560 is a great grill as well! This is a little bit different and won’t be my everyday pit just because of the manual control… but I’m really excited about including this in my rotation!

Yeah the 560 is a good pit, and it works well for my family as far as what we need in an all around pit, but there’s an Oklahoma Joe’s Pellet grill up here in Washington state. It’s at a local grocery store(Safeway) and I believe it was marked down, I believe it was 35% the last time I was in there. I might get it for the wife, at least that’s what I’m gonna tell her 😂😂🤣🤔

    Design wise its pretty simple. You do get some temp swings adding wood, but not too bad.

    I was stumbling around Home Depot last Saturday and found tucked in the corner a Grand Champ XD. It had a sales tag for $275!!! I’ll give you one guess who owns it now,😂😂😂

    What is your thoughts on why they do not create reverse flow in this style, I have cooked on this type of smoker for years and when you smoke you have to use the far end which limits you on how much meat you prepare.

    By yourself would be a heck of a challenge. The firebox assembly would’ve made me quit if I had to do it alone lol

    If you want the charcoal taste first you should start on the Weber kettle, $160.00 dollars, easy way to start. Next, why not try a drum smoker, the Oklahoma Joe's Bronco is $300.00 dollars, or the Weber Smokey Mountain which Harry Soo uses in competition. $300.00 or so for the 18 inch. and $400.00 or so for the 22 inch. And if you still are hooked and want to try an offset, which requires a lot of Hands-On work, and temp adjustment and putting wood in it every 1/2 an hour or so, then move to an offset.

    The benefit to the offset that the others can’t exactly compete with is size. The WSM are staples in the BBQ world but size can be a factor for a lot of people. I started out on a Weber kettle, and in fact I still have it and use it.

    @@AndersonsSmokeShow Well, the Weber Smokey Mountain takes up less space then an offset and you get GREAT smoke flavor with it! It also burns charcoal and wood chunks that you can buy everywhere. Once you get the temp dialed in, there's not much adjusting you have to do. The offset does take up more space, and there's a lot bigger learning curve when using it, and you can't leave it alone, they have a tendency to know when you're not looking. You have to buy wood for it and totally learn Fire management! If you have a Weber kettle you should do a lot more cooks on that! Ry on "Cooking with Ry" does a lot of cooks on it, even though he's got new pellet grill Lonestar offset, and a couple of drum smokers. Just my opinion of course lol.

    If you're a beginner you would have better luck with the Old Country Pecos which sells at the same price point and will last a lot longer than any Char Griller.
