Cha-gio jjolmyun (Chewy noodles with fried spring rolls)
• INGREDIENTS:
[For Cha gio(Fried spring roll)]
Cha gio wrapper, 1 carrot, 1 onion, 10g black mushroom, 200g minced pork, 100g shrimp, 1 egg, 1 tbsp of sugar, 1 tsp of salt
[For Jjolmyun(chewy noodles)]
800g Jjolmyun, bean sprouts, lettuce, perilla leaves, sesame salt, cooking oil
[For sauce for Jjolmyeon]
4 tbsp of Gochujang, 2 tbsp of red pepper powder, 6 tbsp of vinegar, 4 tbsp of sugar, 2 tbsp of soy sauce, 2 tbsp of minced garlic, 2 tbsp of sesame oil
▪ DIRECTIONS:
[For Cha gio(Fried spring roll)]
1. Chop shrimp, black mushroom, minced pork a carrot, and an onion all together.
2. Put chopped ingredients in a bowl and mix them all with an egg.
3. Season the mixed ingredients with 1 tbsp of sugar and 1 tsp of salt.
4. Soak the Cha-gio wrapper with some water and roll it up with the seasoned ingredients.
5. Put some cooking oil around the pan, and grill like frying the wrapped Cha-gio.
[For Jjolmyun(chewy noodles)]
1. Put 4 tbsp of red pepper paste, 2 tbsp of red pepper powder, 6 tbsp of vinegar, 4 tbsp of sugar, 2 tbsp of soy sauce, 2 tbsp of minced garlic, and 2 tbsp of sesame oil in a bowl and mix them well to make the sauce for Jjolmyun.
2. Boil 800g of Jjolmyun in boiling water for 3~4 minutes, then rinse them with some ice water.
3. Add 1 tbsp of vinegar to the boiling water and blanch bean sprouts for 3~4 minutes.
4. Put Jjolmyun, bean sprouts, perilla leaves, and lettuce in a bowl and mix them well.
