1. TRADITIONAL CAO LAU NOODLE FACTORY
🍜CAO LAU NOODLES: Soak the rice for 24 hours then grind it. Cook and stir until thick for 30 minutes.
Steam for 30 minutes. Roll to make it flat and steam.

🍜CAO LAU: In a bowl, add herbs, bean sprouts, cao lau noodles, char siu, chả ram, deep fried pork fat (tốp mỡ) then meat sauce.

3. PHỞ SẮN FACTORY
🍜 PHỞ SẮN: Grind the dried cassava into powder. Soak the cassava powder and water for 3 days and 3 nights then filter the water out, keeping the cassava powder. Whisk the cassava mixture in a pot for 30 minutes. Smooth mixture out. Place batter in a pressing machine. Dry noodles in the sun. After drying, cut into squares.

4. NHÀ HÀNG CỎ HỒNG
🍜FRIED PHỞ SẮN: Pestle the pearl onions and place vegetables in hot water. Make the sauce with fish sauce, vinegar, msg, and coconut nectar. In a pan, add peanut oil. Fry the garlic, shrimp, and squid, add sugar, and then the vegetables. Add water and add a little starch. In another pan, deep-fry the pho san noodles. In a bowl, add the fried pho san, sauce, shrimp, squid, and top with spring onions.
🍜PHỞ SẮN WITH FISH BROTH: Cook snakehead fish broth for 5 hours. Break the pho san into pieces and soak them in cold water for one minute. Place oil in a pot, add in pearl onions, garlic, tumeric, and the snakehead fish, and fry it for 10 minutes. Add in the pork. Pestle the fish. Add in the broth and cook

5. MÌ QUẢNG BÀ LÁNG

🍜MÌ QUẢNG NOODLES: Soak the noodles and grind with a machine. Spread mixture on a flat surface and steam. When it’s cool, fold and cut it.
🍜MÌ QUẢNG: Add fresh mì quảng in the bowl. Add char siu meat sauce. Add char siu and shrimp. Top with the peanuts and spring onions. Add herbs and fresh vegetables.

I love Hoi An. Locally grown vegetables in Hoi An are all organic. The deliciousness cannot be found anywhere else. Hoi An is a magical place. Just go and see this place ... there is no equal globally.

Always good to see Calvin in a video. You guys click well together. The Play Doh machine is a noodle machine. Had me rolling. Vietnamese really make some awesome noodle and soups. Love the variety of noodles and broths. The root as a noodle is making what you got work. So cool to see how the noodles are made and the people that do it everyday. Always fun to watch. Great video

Noticeably, in addition to its fresh ingredients, Vietnamese cuisine is most often served along with lots of fresh herbs and vegetables. Nothing adds better flavor to your food than fresh ingredients. Not many cuisines in the world have this quality.
The food "Quang noodles" and "cao lau" are my favorite dishes. In Vietnam, I rarely enjoy because it is quite difficult to prepare. The pinnacle of ancient Vietnamese cuisine.
Vietnamese cuisine is undeniably delicious. I will certainly have what they're having.
When Sonny and Calvin are together it makes me so happy. They have such a cool friendship they really seem to bring the best out of each others personality
If Sonny works as an ambassador there would be no more wars in the world! Such a nice personality

Vietnam has won a record for a country with with the biggest number of Noodle dishes.. nearly 300 difrerent noodles across the country. Many are even better than Pho. My favorite is BUN RIEU (Boon real) Hanoi (when Im sick or tired I always crave its delicate flavor).

Bumped into this channel 2 years back and since then never missed a single vdo
The Vietnamese dish "cao lau" has a very majestic and interesting history. The dish will be served on the first floor of the shop in feudal times and you can see the scene of people walking below. Eating is also named after sitting upstairs

Watching these videos made me realized that I wasn't traveling smart. I traveled a lot around SEA including Vietnam. But stayed in the city, eat in the hotel, go to every overcrowded beach etc. When I could enjoyed the rich culture with the locals, visit the markets, explore the village as hidden gems are usually found in these areas.
you two have great on screen chemistry. when Calvin is on, entertainment value increases.

For additional information, with the receipt of CAO LẦU (KOWLOW) noodle string, the powder would be treated with the ash from the special wood in Cham island and only the water from the Champa well (BÁ LỄ well) before coming next steps. This dish is an example of the cultural exchange of Hoi An trading port (Noodle string shape is similar to Udon noodle of Japan, the meat ingredient - Charsiu meat from Chinese, ash treated powder for the noodle string, herb green mix with mung bean sprout from Vietnamese, water from Champa well) For the MI QUANG (MI WANG) noodle, you should add the broken rice cracker (bánh tráng nướng bẻ vụn) to your bow before eating. It will bring a mix of textures that would make you interested more. (Some other versions of MI WANG will have the dyed yellow noodle string (from Turmeric) that brings more colorful and tasty to the dish)

Exploring the origins of Vietnamese noodles and chasing them to where they are cooked perfectly to their own food characters- that’s one food video blogging ‘plot’. Kudos to Sunny and his production team! (and Calvin in his “cameo appearance”, too). That is why Sunny doesn’t have to rely on corny over-reactions to food; i.e. wide mouth, eye-rolling and looking over the shoulder where the cook is; no need for that drama.

It is so great to see Hoi An and Cao Lau featured! it was the last place I visited before COVID and I got addicted to the specialty dish :) if you're ever in Hoi An also check out Banh Mi Phuong and the craft brewery across the road from it 👌🏻
