This guy makes Peruvian cuisine a terrific experience! Now, I understand why its too difficult get a reservation on central restaurant. Combine and reflect a history in each dish, its a goal of his success. Absolutely creative, tasty and delicious. The diversity of their resources make the difference. Peru deserves the first place. But we Peruvians respect and hug other cultures and that’s what makes us great! We not only have Japanese and Chinese techniques…We also have Spanish, Italian, Arabian, African and The most important our Inca culinary tradition! That’s why we are the best! We feel proud of what we are!

@@vanessaprada8255 I was a chef at a Michelin starred restaurant in Lima..It's asian technique and brains that have informed a few of your superstar chefs..I can assure you: Peru's advancement in cuisine would be nothing without chinese or Japanese technique. I am neither of the two ethnicities mentioned--but in terms of food--they push the boundaries, coupled with Peruvian natural food resources..Are you in the culinary world? Are you in the fanciest kitchens like me? However I would say N. Europe and Mexican food has estimable qualities in cooking

Con esto queda demostrado que no importa tu grado de instrucción o cuanto dinero poseas, si no eres humilde y sabes reconocer los logros de otros entonces de nada vale todo lo anterior expuesto.

This is 30% Peruvian food, 50% innovation, and 20% philosophical stuff, not even heard in historical Peruvian food. However, all that is original and with impeccable presentation. Proud of you, Central.

Paiche (pirarucu in Portuguese) is a fish, not a snake. Even the word “paiche” itself means “fish” in colonial Spanish.

Id like to see/would have been curious about the vegetarian menu. I think this is one of the best places on earth to just leave the sea creatures alone and enjoy all the incredible veggies available so im guessing the veggie menu is amazing
