This video showcases our Cebuano food culture, where I present the cooking of a freshly caught saltwater eel, locally known as "Bakasi", which is a popular street food in Cebu that is known to have aphrodisiac properties.
These eels are cooked in a variety of ways, but is mostly known for a sour dish called LARANG, that is equivalent to a sour soup called TOM YUM in Thailand.

Wow! I remember when I was in my denarian stage, around 10-13, we used to eat bakasi here at home and I can still remember the way my father cooks it. I really don't like the bakasi at first because of course I was so arrogant that time, I just don't like it everytime its body moved and wiggles around, for me, it feels like I am going to eat a big WORM that's why I prefer only the soup itself, not the fish haha. You know I was so immature that time. But when I got used to it, I realized that Larang's so good plus my father's cooking skills really amazed me. I was also wondering why my father wont remove the internal part of the bakasi, I didn't ask him why. But because of this video, I learned that it is because of its bile which is the main reason why it should be remain ungutted. Another amazing video! Thank you so much for this!

In my 22 years of existence here in Cebu, I haven't tried eating linarang na bakasi but because of this video I want to try to cook and eat that dish very soon and also its my first time knowing about the katmon fruit and I'm very intrigued because it can be used as a ingredient in many dishes. I never try linarang nga bakasi but I can already feel the taste of its sourness and I think its delicious. Also I don't have any idea that a Katmon fruit can be a souring agent to a dish but thank you for your video another informative video in which I gained another knowledge about on how to cook a dish like this.

The Larang na Bakasi is a very good dish here in Cordova, but when I was a little kid I don't eat it because for me it is a snake but growing up I learned to love it. and after learning to love it, I learn how to cook it, and the funniest part is when you add the Bakasi that is still alive in the pot, and then it will jump out of the pot and you have to pick it up and then it still moves. And if you really want to taste the original Cordova bakasi na Nilarang you should dine in at Tatay Entoys Bakasihan here in Buagsong Cordova.
Well its not the first time I've heard of bakasi, but however it is my first time hearing about the souring agent used in preparing the larang. I have never seen or tasted the catmon fruit but learning about it makes me happy because it just shows how cooking and the cuisine here in cebu is truly unique and amazing.

It is really fascinating how the Philippines have a variety of souring agents, each having its distinct taste and level of sourness. I have already seen a katmon fruit but never had a chance to cook with it. I've never imagined larang and having katmon as its souring agent. I'm so happy to watch this video because it gives me an idea that the catmoon fruit can also use as a sour agent for a dish. I've tried this fruit during my childhood years but I haven't tried to put some in a dish. Oh that's a good news ha that there is a Katmon tree in your place. Please tell your family to plant more coz its not just good for cooking but it is also a herbal remedy for coughs and colds its very rich in vit c. You may blend it as juice sweetened with pure honey. But the more important of it all is that - Katmon trees are endemic to our place and native trees are good for our local biodiversity meaning it will thrive abundantly without even adding synthetic fertilizer and insecticides that may harm our pollinators and bugs that will help fertilize our soil naturally. Larang is a very delicious dish and is one of my favorites, I would love to paired it with kan-on mais and sinugbang baboy. This Larang nga bakasi is very interesting, I haven't tasted Larang nga bakasi yet but for sure it is full of flavors. I have learned also that there is a fruit that can be used as a souring agent in any dish called Katmon. I wish I'd known about this sooner so I could put it to use. I also learned that locals believed that bakasi's bile has medicinal properties. The taste of this dish, linarang nga bakasi with katmon, is very interesting. 🥰

Larang is one of my favorite stews, especially after a long night I would crave larang but I never really tried larang in this way and I did not get a chance to eat Bakasi, I'm very intrigued by this recipe and I would like to try this out someday.

In the olden times it used to be the souring agent of the locals in the Municipality of Catmon Northern Cebu in cooking meat and fish it just gradually loses its usage due to the presence of introduced species like the tamarind and iba which are non-natives and until very recently it has been promoted by tree enthusiasts and regained back its popularity. Wow! It looks very delicious though I haven't tasted any dish made from bakasi. Through this video I was introduced to an unfamiliar fruit called katmon fruit it uses as the souring agent, I didn't know that there is such fruit existed. I also learn an interesteing belief of the locals that a bakasi bile has a medicinal purposes. It is very interesting to watch how to cook linarang nga bakasi with katmon fruit.

I love Larang so much especially when its still hot. We made larang at home too before but we used the iba as our souring agent. I havent tried using the katmon fruit yet. I think i noticed it already but I Havent tried using it in any dishes yet. I havent tried bakasi yet too, I still wonder how it taste because a lot of my friends told me that it was delicious.

Yes mam it's our Philippine native tree but wala na kaau na gamit for culinary purposes lately..
