It's OK to say you are sending the finished cattle to the slaughterhouse. That is part of the business and the consumer needs to learn what that means. "Harvest" is a silly word for slaughter. It applies to crops or species that are caught or hunted.

Pretty well every farmer has help from previous generations other wise it is nearly impossible to get into. Also why there are so many government programs to support farmers.
